Those darn sugar coated bunnies and chicks! I thought everyone knew what a Peep was until last year when I was talking to a friend from Ireland and he had no clue what I was talking about! They don’t have them there so of course I had to run and grab some for him to take back for everyone. I’m not a huge fan of Peeps but growing up we always had them and my husband and the girls like them. Hey it’s once a year let them eat all the sugar, well maybe twice since grandma always gets extra after to roast over the fire in the summer. Yeah a little strange, fun, and funny just be VERY careful of the burning hot sugar. I am a fan of popcorn, as is the whole family. With all the travel recently I was looking forward to a relaxing movie night this coming weekend with the family and since popcorn is definitely one of our movie musts I decided I would make Peep Popcorn! No worries there were no actual peeps consumed during the making of this popcorn and it is vegan! Yep everyone can get their Peep fix and a dose of sugar with this tasty treat.
Of course I had to make test batch or two and try to keep hands away from it long enough to photograph because it was a winner! Of course we made ours “pretty pink” Peep Popcorn as the girls were calling it but you can make yours any color. Even though it is called Peep Popcorn it really should be called Marshmallow Popcorn because you can make with sprinkles or the sugar (it gives it that sugar texture like peeps and really leaving it off makes a difference) for any special movie night, party, or occasion!
Peep Popcorn
Makes 6-8 servings
1-10 oz bag marshmallows (Dandie’s Vegan Mini Marshmallows)
1 TBSP coconut spread
1 TBSP coconut oil
10c popped popcorn (Quinn Just Sea Salt Popcorn 2 bags)
2-3 TBSP colored sugar
If using microwave popcorn as we did pop popcorn and remove unpopped kernels. Line a baking sheet with parchment paper and set aside. In a large bowl add coconut spread, coconut oil, and marshmallows and microwave in 30 second intervals, stirring in between, until melted about 2 minutes. I let the last burst of cooking go slightly longer until they are puffy. Remove and quickly, but carefully, stir in popcorn. It will all be coated plus extras if you want you can add more popcorn but we like the big sections of marshmallow. Dump popcorn onto parchment paper lined baking sheet, sprinkle, and toss with sugar. Let cool slightly until the marshmallow is set, about 10 minutes is fine. Enjoy!

I don’t get it either but there is something some people like… like some members of my family, lol. Thank you think is a version I can eat since it is less sweat and paired with popcorn!

Thank you! It’s a healthier way the Peep lovers in the family can get their fix as it is paired with a healthy popcorn. They eat less and it fills them up vs eating those darn sugar coated marshmallows.
