I wasn’t going to make a smoothie for National Pina Colada Day but last minute we ended up making them one as the girls wanted a pineapple smoothie. I made theirs and it was so good I decided to make one for myself, instead of the green smoothie I had planned on making myself. I thought ok I will do a green shot on the side of wheatgrass and greens, as I saw my large “shot” of green juice sitting there I thought heck I am pouring it in! Living on the edge I know instead of a shot of rum I decided to add a shot that was good for me.
Pina Colada Protein Smoothie “The girl’s version”
Makes 2 servings
1 1/2c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)
2c, heaping, fresh pineapple chunks
1 frozen banana
2TBSP shredded coconut (used Let’s Do Organic Unsweetened Shredded Coconut)
1/4c raw hemp seeds (used Nature’s Earthly Choice Raw Shelled Hemp Seeds)
Ice, optional
Pineapple wedge for garnish, optional
In a Vitamix or high-speed blender blend together coconut milk, hemp seeds, and coconut until hemp seeds are broken up and mixture is fairly smooth. Add banana and pineapple chunks and blend until smooth. Blend in optional ice if desired. Garnish with an optional pineapple wedge. Enjoy!
Pina Colada Protein Smoothie “Mama version” with optional Sweet Green Juice Shot
Makes 1 serving
1/2c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)
1c, heaping, fresh pineapple chunks, plus I added part of the core
1 scoop Vega One French Vanilla
1TBSP shredded coconut (used Let’s Do Organic Unsweetened Shredded Coconut)
Ice, optional
Pineapple wedge for garnish, optional
In a Vitamix or high-speed blender blend together coconut milk, Vega One, pineapple, and coconut until smooth. Blend in ice if desired, I did, until smooth. Garnish with an optional pineapple wedge. Pour into glass and pour in or serve with optional Sweet Green Juice Shot if desired, recipe below. Enjoy!
Sweet Green Juice Shot
1c cold water
1tsp wheatgrass powder (used Navitas Naturals Wheatgrass Powder)
handful or organic baby spinach
handful of organic mixed kales
1tsp coconut palm sugar (used Navitas Naturals Coconut Palm Sugar)
In a Vitamix blend everything together until smooth.
