When I think of summer I think about all the time spent with family and friends. All the late night cookouts, picnics, soccer games, and just hanging out with friends. Late night, mid day, it doesn’t matter as there are always memories being made and good times being had. Being gone this summer traveling with my husband for work I’m happy for the time spent with my family but we miss times just enjoying summer and spending it with friends so we are making the most of the time we have at home. That isn’t to say that we don’t enjoy our times traveling, at the cabin, or camping it’s just different. When I think of summer I also think of cold refreshing drinks and we always have those on hand weather it’s our ice cold water, a smoothie, refresher, or cocktail. Lemonade is one of those drinks that screams summer! This is a combination of lemonade and ice/frozen fruit is perfect for after a workout or soccer game, an afternoon picnic, a cookout, or a late night by the fire or just hanging on the deck with family and friends. Easy to blend up, simple and delicious, refreshing, and easy to add a little fun with maqui or even rum for a late night cocktail. Add in a little maqui and it’s not only pretty it’s a powerful superfood punch! Maqui is packed with antioxidants, more than blueberries and even acai! No matter how you blend it up it’s sure to quench that thirst and leave you refreshed even on the hottest summer day!

Pineapple Ginger Lemonade Refresher with Maqui

 

Pineapple Ginger Lemonade Refresher
Makes about 1 1/2 quarts, 4-8 servings
1/3c lemon juice
4c cold water
2 TBSP agave or sweetener of choice
1 TBSP fresh grated ginger root
3c frozen pineapple chunks, or more for a thick slush

 

Options/Variations:
-For Maqui layered refresher pour half the mixture into glasses. Blend the remaining half with an additional cup of frozen pineapple chunks and 2 teaspoons of maqui powder (Navitas Naturals). Pour over the first layer and it will float above as shown.
-Make into a cocktail by adding rum.

 

In a Vitamix, or high-speed blender, blend everything together until smooth. See notes above if making the maqui layered refresher or variations. Garnish with lemon slices and or pineapple wedges if desired. Enjoy!

      Thank you! It’s got a lot of antioxidants and anti-inflammatory compounds and it’s a great addition to smoothies or anything you would use acai powder in.

      YES! It’s much easier to buy a big bottle of pure lemon juice but juicing lemons also works! They would pair perfectly with your Berry Tartlets for an afternoon treat!
