With National Pineapple Upside-Down Day coming up in a few days, April 20th, it is the perfect reason to make a Pineapple Upside-Down Energizing Smoothie! This delicious smoothie was the perfect afternoon pick up for me on this crazy busy day.
Pineapple Upside-Down Energizing Smoothie
1c coconut milk, or non dairy milk (used So Delicious Unsweetened Vanilla Coconut Milk, only 45 calories!)
1 tsp gelatinized maca, optional (used Navitas Naturals Gelatinized Maca Powder)
1c fresh pineapple, chunks
1 tsp raw agave
1 cherry, pitted, optional
cup of ice
In a small food processor blend 1/2 cup of fresh pineapple and agave, don’t puree or blend smooth. Put cherry in the bottom of a glass and pour the pineapple agave mixture on top of the cherry. In a Vitamix or high-speed blender blend coconut milk, Vega Almondilla Energizing Smoothie, 1/2 cup of fresh pineapple, optional maca, and ice. Pour over pineapple mixture in glass. Enjoy!!
*Alternatively if you don’t want the small pieces of pineapple and layers you can add all the pineapple and agave into the blender with everything else and blend all together and place the cherry on top if you wish or omit it.
