There are a couple of protein packed carrot snacks the girls and I have been eating, a lot, lately that are healthy and delicious! We have Nut Butter Carrot Bites, think a spin-off of peanut butter and crackers, and we have Carrot Chips and Peanut Butter Yogurt Dip! The Nut Butter Carrot Bites are also a great, and easy, on the go snack!
Nut Butter Carrot Bites
carrots sliced into desired thickness, we do both rectangles and circles (use my food processor to slice up a bunch to keep on hand)
peanut butter or almond butter, we use both (in addition to our plain PB&Co Smooth Operator we like PB&Co Cinnamon Raisin, if using almond butter, I use MaraNatha I will add a little cinnamon and chopped raisins)
You can either spread the peanut butter on a carrot and top with another carrot or I like to put the peanut butter/ almond butter in a bag and cut off the end and let the girls squeeze it on a carrot and make their own sandwiches. These are also great on the go if you use the single serve packets of peanut butter or almond butter you can just tear off the corner and squeeze onto your carrots! Enjoy!
Carrot Chips and Nut Butter Yogurt Dip
carrots sliced into desired thickness, just not too thin or they bend and don’t dip well (use my food processor to slice up a bunch to keep on hand)
peanut butter or almond butter
yogurt (the girls like it with plain greek yogurt, it makes a thick dip)
The ratio we use for the dip is approximately 1/2c of yogurt to 1 tablespoon of almond butter or peanut butter. Depending on which yogurt and peanut butter you use you may want to add a little stevia or sweetener of choice. We also will add a sprinkle of cinnamon sometimes to mix things up. Serve dip with carrot chips, slices, and enjoy!
