I wrote early about how I didn’t eat a lot of cereal before our trip to Ireland other than muesli or granola. Not that all cereal is bad but a lot of it out there is processed, full of sugar, and refined carbs. I grew up loving cereal. I could eat cereal for breakfast, lunch, and dinner, and was often the first thing I would grab when I got home from school and my bowls were small either. I never cut out cereal completely but make more conscious choices as to which cereals I would eat and would eat them only on occasion. Again not cutting out all cereal as I still love muesli, granola, oats, chia which work for my cereal cravings. Yes I know some are grains and seeds and not cereal but making them into porridge, oatmeal, or overnight oats/ chia is like cereal for me.

 

While in Ireland I got “hooked” on buckwheat and bran flakes! I had to be more flexible with my eating and well it was something I turned to with yogurt and plums, Yogurt and Plum Breakfast Bowl, and didn’t turn back. We got home and I made that and then started playing more and this is my newest  fall cereal concoction obsession! I like my cereal mixture to have some texture and crunch so I make it by hand, if you would like a thick smoother, it will still have some texture, you can blend it together. While this is called a breakfast bowl I am guilty of enjoying it for a snack. My youngest wanted this too one morning but she wanted hers with pumpkin yogurt, now that is pumpkin love. I debated on sharing this one as it wasn’t very photogenic but after her bowl was scraped clean and I had just enjoyed it yet another morning I had to share it.

 

Pumpkin Breakfast Cereal Bowl

Makes 1 serving

3/4c bran or buckwheat flake cereal

1/4c pumpkin puree, or canned pumpkin

1/3c milk of choice (used So Delicious Vanilla Almond Milk Plus, for the extra protein)

1/2 tsp pure vanilla extract

1/2 tsp pumpkin pie spice

1/2 tsp cinnamon

1TBSP pure maple syrup

6-8 oz vanilla, plain, or yogurt of choice (used So Delicious Vanilla Almond Milk Yogurt for one shown, and Siggi’s Pumpkin Yogurt for the other)

 

In a bowl mix together pumpkin puree, milk, vanilla, pumpkin pie spice, cinnamon, and maple syrup together until smooth. Stir and crush in cereal and let sit 5 minutes. If you want it smooth blend it all together in a mini food processor, Vitamix, or blender until smooth instead of mixing in a bowl. Stir in or layer with yogurt and enjoy!
