I got my hands on some Dandies Pumpkin Marshmallows! I had been waiting and watching for these for months as read online in the spring they would be coming out this fall. I already had a list of things I wanted to make with them so now the hard decision of what to make with them first! These bars were kind of on the list and not what was planned but things have a way of turning out just how they should be. The girls were helping me and let’s just say I’m glad I thought to photograph them before anyone got their hands on them to test them because they were gone so quick! I’m thankful for family, friends, and neighbors being over so I only ate half of a pan myself! Seriously these bars are so good and addicting, once you have one you just want and need more! I even gave one to a friend who only wanted half a bar, and dared her to only eat half. I blinked and it was gone, need I say more? So quick and simple, well other than needing a little muscle to stir them as the marshmallow cools and then pressing them into a pan. Kids like to help breaking up the Oreos, or maybe they just liked it because they got to lick their messy cookie hands after. The pumpkin flavor is subtle but if you wanted more you could always mix in some pumpkin chocolate chips.
We like to eat healthy most of the time but also have our treats in moderation. A 9×9 pan of these is definitely moderation, and even better if you share them. Trust me your friends and family will thank you, or me, when they try them! I’m thinking I should have made a pan to take up to my local Whole Foods to share so they had even more of a reason to get and keep these marshmallows on the shelves! Unfortunately my Whole Foods isn’t getting these in even though the system showed they would over a month ago and I ordered a case. There are a few other local stores that are suppose to get them so I am calling them today or ordering more online. Also since I made these and wrote up the post Pumpkin Oreos have come out! If you are a big pumpkin fan these taste amazing with the Pumpkin Oreos!
Pumpkin Marshmallow Oreo Treats
Makes a 9×9 pan, 16 bars
1- 16 oz pack Golden Oreos or Pumpkin Oreos
1 package (10oz) Dandies Pumpkin Marshmallows
2 TBSP butter (used Earth Balance Butter Spread)
Line a 9×9 pan with parchment paper and set aside. Break cookies into small pieces, at least fourths, and place into a bowl, and set aside. In a large microwave safe bowl heat marshmallows and butter in the microwave for 1 minute, stir. Continue cooking in 30 second increments until melted, about 3 minutes total. Stir marshmallow and quickly stir in cookie pieces as it will get harder as they cool. Press mixture into prepared pan. You want to make sure you press them in there good. I like to place a piece of parchment paper over top and press to pack them and smooth them out. Place in the refrigerator for about 30 minutes to set. Remove from pan and slice into bars. Enjoy!
