Pumpkin Pie Chia Protein Pudding

 

This Pumpkin Pie Chia Pudding is great for breakfast, dessert, or anytime in between. It is a delicious combination of chia pudding, creamy pumpkin, and a chai protein cream! I made mine in 3 layers but you can combine any of the layers to make it 2, or make them all together. I put it in a tall glass to show the layers but works a little easier to get a little of each layer when layered in a bowl.

 

Pumpkin Pie Chia Protein Pudding

Makes 1 serving

 

Chia layer

3TBSP chia seeds (Navitas Naturals)

1tsp coconut palm sugar (Navitas Naturals)

2/3c non dairy milk (used So Delicious Unsweetened Almond Milk Plus)

 

Pumpkin layer

2/3c fresh or canned pumpkin puree

1/2tsp pumpkin pie spice

 

Chai layer

1 scoop chai protein powder (used Vega One Chai) or vanilla protein powder (such as Vega Viva Vanilla Protein Smoothie) with cinnamon

2/3c non dairy milk (used So Delicious Unsweetened Almond Milk Plus) if you want your cream to be thick reduce the milk or place in the freezer for 5-10 minutes

 

*Optional I will also add a tablespoon of flax seed to mine.

 

Mix together chia, milk, and coconut palm to make chai layer and let sit about 15 minutes. In another bowl, or if you pour your chia mixture into your bowl or cup you can rinse and use the same bowl, mix pumpkin with pumpkin pie spice and layer on top of chia pudding. Again in another bowl, or after rinsing your bowl mix chai protein powder and milk and pour over pumpkin layer. Sprinkle with a dash or pumpkin pie spice, grab a spoon, and dig in! Enjoy!
