Another pumpkin recipe! Pumpkin Pie French Toast is a eggless french toasted made with flaxseed, pumpkin, and yogurt. You can top them with pure maple syrup or layer yogurt pumpkin pie filling in between the slices!
Pumpkin Pie French Toast
Makes 4 servings, 12 slices of french toast
12 slices bread (used Food For Life Ezekiel Cinnamon Raisin or Ezekiel 4:9)
4 flax eggs (4 TBSP ground flaxseed and 12 TBSP warm water)
1/3 c pumpkin puree
1 tsp cinnamon
1 tsp vanilla
1- 6 ounce container plain yogurt (used So Delicious plain coconut milk yogurt)
Pumpkin Pie Filling
2- 6 ounce vanilla greek yogurt (used So Delicious Greek Style Vanilla Coconut Milk Yogurt)
2/3 c pumpkin puree
1 tsp pumpkin pie spice
plain vanilla greek yogurt, chopped pecans, maple syrup, cinnamon
In a medium bowl combine flax and warm water to make flax eggs, let sit 10 minutes. After the flax eggs have thickened and formed a gel add in pumpkin, cinnamon, vanilla, and yogurt; stir to combined. Preheat griddle on medium-high. If making filling combined all ingredients in a bowl until smooth. One griddle has heated spray with coconut oil, or non stick spray. Dip bread into pumpkin egg mixture, or spread it on, removing excess, and place on the hot griddle. Bread will start to have steam and when you go to flip it will release from griddle, once griddle flip and grill the other side. Once both sides are cooked plate and serve immediately or place on a cooling rack so french toast does not get soggy. If using the pumpkin pie filling layer in between slices, top with vanilla yogurt, a sprinkle of cinnamon and chopped pecans. Or you can just top them with syrup, the choice is yours. Enjoy!
If you have leftovers you can store them in the freezer and place them in toaster to reheat them as needed.
