Nothing like a new week, a new perspective, and a delicious healthy breakfast. Pumpkin Pie Overnight Oats Smoothie Bowl to start my Monday and October. Last week was rough, sorry it was so quiet here on the blog. Started out with me being sick, my computer (only 15 months old) having a video card going out so not having a screen, and then a doctors appointment and a little scare. The week leaving me physically and emotionally exhausted. Things turned out to be ok, I’m feeling a little better, I’m counting my blessings, and stating the week with a new clean perspective looking forward. Oh and thankfully I was able to save almost all my data, well my husband was, off my computers hard drive since the connection to the network was knocked out with the last storm and wasn’t backed up, before having to send it in for repair. It will take a couple weeks before I get it back but I “borrowed” one of the girls computers since an old one that I started using was having issues. Oh the world of computers, can’t live with them and can’t live without them. Ok you can live without them but kind of hard to have a blog without one.
A new week, a new start, oh and it’s October and a Pumpkin Pie Overnight Oats Smoothie Bowl is how you will want to start your day! Overnight oats and smoothie bowl, what? Yes it’s a combo of the two, thick and creamy and a little more smoothie bowl than oats when compared to many overnight oats, yet not smooth like a smoothie bowl. The weather here lately is hot and humid one day and cold and rainy the next. I cannot keep up, do I want a smoothie or a warm comforting bowl of oats? I often go to bed having no clue, or having one only to wake up not wanting to make oats when I suddenly have to turn the air on again. I don’t have extra time in the morning with getting the girls up and ready for school, getting myself ready, and getting them to school before barre. My solution is blending up a simple pumpkin protein smoothie, stirring in oats, and putting them in a jar in the refrigerator before going to be. Come morning I let the dogs out and decide weather I will enjoy them hot or cold. Grabbing the jar and throwing on toppings and enjoying cold or warming up before adding toppings. Not going to lie when I enjoy them cold it’s usually in the jar and looks like a mess. Warm I tend to take a little more time, especially if I have a few extra minutes to throw them in a bowl, and they look a little prettier like the bowl shown. Or if I wake up early and enjoy a comforting bowl and my coffee, snuggled up, and enjoying a moment of calm before the craziness of the day.
Aside from a quick, delicious, healthy breakfast that you can decide to enjoy warm or cold in the morning you get to add all the toppings! My favorites for this bowl right now are chia seeds, pecans, cacao nibs, and a drizzle of pure maple syrup. Of course like smoothie bowls I make often I switch things up based on my mood. Packed with nutrition it’s a perfect way to start and fuel my day! If you don’t want to use protein powder you can use a protein milk and make a version more like the S’more Overnight Oats I posted a couple weeks ago but keeping the pumpkin puree and spices and omitting the cacao powder in the other recipe.

- 1/4 c rolled oats, gluten free if desired
- 1 c pecan milk or almond milk (Silk Unsweetened Almond Milk, MALK Pecan Milk)
- 1/3 c pumpkin puree, not pumpkin pie filling
- 1 scoop vanilla protein (Vega Sport or Clean Protein)
- 1/2-1 tsp pumpkin pie spice
- 1/2-1 tsp maca powder, optional (Navitas Organics Gelatinized Maca Powder)
- toppings as desired (used chia seeds, cacao nibs, pecans, pure maple syrup)
Ingredients

- In a Vitamix, or blender, blend together pumpkin puree, protein, pumpkin pie spice, and optional maca until smooth.
- Pour into a jar and stir in oats.
- Cover and place in the refrigerator for 4 hours or preferably overnight.
- Remove from the refrigerator, give it a quick stir and top with optional toppings as desired if you'd like to enjoy cold.
- To enjoy warm remove lid and warm in the jar or transfer to a bowl, warm for a couple minutes until desired temp, stir, top with optional toppings as desired.
- Enjoy!

I like adding into my smoothies, smoothie bowls, oats, and power balls/bites. I started using it years ago. There are many drinks with it now too if you are just looking to try it.
