It is fall and time to spice up my protein power balls! Pumpkin Protein Power Balls were at the top of my list! I made two batches, one with craisins and one with maca chocolate.
Pumpkin Protein Power Balls
Makes 12-16 balls
1/2 c oats or quinoa flakes, gluten-free
1/2 c oat flour
2 TBSP ground flaxseed
1 scoop vanilla or chai protein powder (used French Vanilla Vega One)*
2 TBSP raw agave
1 tsp pumpkin pie spice
1/3 c pumpkin puree
1/3 c almond butter
1/4 c craisins or chocolate (used craisins for one batch and chopped Vega Maca Chocolate Bar for the other)
*Will also work with Vega Sport Performance Protein.
In a large bowl mix together oats, oat flour, flaxseed, and pumpkin pie spice. In another bowl mix together agave, pumpkin, and almond butter. Mix the wet ingredients into the dry and stir with a spatula until combine. Stir in craisins or chocolate. Roll balls into desired size. Store in refrigerator or freezer until ready to eat. I keep mine in the freezer. Enjoy!
