It’s pumpkin time! Yes I already ran to Bath and Body works a couple weeks ago right after we got back from NYC and got pumpkin candles. Followed by a couple trips to the stores to stock back up after vacation and instead of getting what I wanted S and I kept grabbing all things pumpkin and apple. In our defense we went from the temps in the 90s in NYC and DC to temps in the 60s back here in MN. Of course since the temp have gone up and down. Now here is the dilemma, what’s a girl to do when she wants a pumpkin spice latte and So Delicious Pumpkin Milk isn’t out yet? Make her own! I have made a few versions over the years, even a Pumpkin Spice Protein Latte, and many pumpkin shakes. I set out this year to make the best ever and I think I did it! My husband was working from home and he likes pumpkin but not usually a fan of pumpkin coffee drinks, he loves coffee too just not pumpkin and coffee drinks. So after a dozen tested and consumed Pumpkin Spice Lattes we have a winner! Even better one version that is great for Pumpkin Steamers which made A extremely happy and it was “the best ever” or so she said as she sipped it and said like 20 times. It uses real pumpkin, is sweetened with maple syrup, and is very rich, thick and creamy!! Not to mention it is dairy free, vegan, and paleo friendly so I can make a big batch of Pumpkin Milk Base and whip them up for all my friends, wouldn’t that be one epic coffee date?! Or just make a batch for me and A, aka mini me, to enjoy for the week. I like to just sprinkle a little pumpkin pie spice on top during the week but on the weekends I like to really sit back and enjoy my coffee, when we don’t have a soccer game or run like we do the next few weekends, and add some So Delicious Coco Whip and caramel drizzle! Ok so maybe I use a little sometimes on Friday too, but hey I use Coco Whip Lite and just a little dallop. Hey fall only comes once a year and I only have a couple months to get my Pumpkin Spice Latte fix, I have to enjoy it! Like I said this is really thick, rich, and creamy but not overly sweet (see notes below and you can add more syrup if you like yours really sweet) and trust me you will sip and savor every drop of it! Now if only the weather would stay cool and the leaves would change I could sit on my deck and sip my Pumpkin Spice Latte while admiring natures fall beauty. Pumpkin Spice and everything nice!
Pumpkin Spice Lattes & Pumpkin Steamers
There are two ways to make this, there is a single version you can whip up in your Vitamix, or high-speed blender. If you want a latte you just add the espresso, either version can be topped with optional Coco Whip and pumpkin pie spice and or caramel drizzle.
The second option is to make a batch of the Pumpkin Milk Base (recipe below) that will make 4-5 steamers or lattes and you can make ahead of time and keep in the refrigerator for up to a week. Just warm it up on the morning using a steamer, frother, or microwave. If you want a latte you just add the espresso, either version can be topped with optional Coco Whip and pumpkin pie spice and or caramel drizzle.
Pumpkin Spice Latte or Pumpkin Steamer
Makes 1 serving
2 TBSP So Delicious Culinary Coconut Milk, original
3/4-1c So Delicious Unsweetened Vanilla Cashew Milk or Unsweetened Vanilla Coconut Milk
2 TBSP pure maple syrup
3 TBSP pumpkin puree (not pumpkin pie mix)
1/2 tsp pumpkin pie spice
1/2 tsp vanilla extract
2 shots of hot espresso, if making a latte
So Delicious Coco Whip, optional
sprinkle of pumpkin pie spice or caramel drizzle, optional
Using this method you can heat the milk before blending or steam after, or use the soup setting on the Vitamix (may take slightly longer if using cold milk). In a Vitamix, or high-speed blender, blend together culinary coconut milk, warm cashew milk, maple syrup, pumpkin puree, pumpkin pie spice, and vanilla extract until blended. Pour into a mug, top with espresso if making a latte. Top with Coco Whip, pumpkin pie spice and or caramel drizzle if desired. Enjoy!

Makes 4-5 servings
1/2c So Delicious Culinary Coconut Milk, Original
4c (1qt) So Delicious Unsweetened Vanilla Cashew Milk, or you can use coconut milk
3/4c pumpkin puree, not pumpkin pie filling
1/2c-3/4c pure maple syrup, we like it with 1/2 a cup but if you like your coffee or steamers sweeter or are looking for a sweet treat add more
1 TBSP plus 1 tsp pumpkin pie spice
1 TBSP vanilla, good quality if possible
In a Vitamix, or high-speed blender, blend together culinary coconut milk, warm cashew milk, maple syrup, pumpkin puree, pumpkin pie spice, and vanilla extract until blended. Pour into an airtight container, I like to use a glass container, and store in the refrigerator for up to a week. Shake before using.

I know it’s crazy how many calories are in them. It is even worse when it doesn’t taste good or they make your order wrong. I still love my stops at the coffee shop don’t get me wrong but I love having healthier delicious options I can make at home, especially on weekends or morning I don’t want to leave home.

Recipe for df caramel drizzle, please?

It is one I was playing with for another recipe, here is the short version. Equal parts coconut palm sugar and cold water, let the sugar and water cook down a couple minutes until is is melted and bubbles. Add in a pinch of salt and twice as much full fat coconut milk as water (if you used 1/4c sugar and 1/4c water you would do 1/2c coconut milk), and whisk until combine. Reduce heat and simmer 10-12 minutes until thickened. It needs to be stored in the refrigerator but not yet sure how long it will keep which is part of why I haven’t posted it so you will have to use your own judgement but I would say up to a week if I had to give an estimate right now.
Here are a few βCaramelβ drizzle options. Blend together 4 Medjool dates, 1/4- 1/2 c warm water, 1/4c pumpkin puree, pinch sea salt, 1 TBSP pure maple syrup. Or blend equal parts vanilla almond butter and maple syrup or agave. Or find more caramel options, such as Lucuma Caramel, on the blog. Or you can use any caramel drizzle or a store bought recipe.
