What better day to share a coffee drink than today, National Coffee Day! It’s that time of year again, pumpkin is everywhere and pumpkin spice lattes have taken over the coffee shops. Weather you are looking for a healthy alternative, a dairy free option, or maybe you are looking for a version with some nutritional benefit this Pumpkin Spice Latte Protein Shake is it! This shake is made with protein, real pumpkin, and is dairy free including the dreamy Coco Whip topping! I have shared other pumpkin spice drinks, including a warm Pumpkin Protein Latte, Pumpkin Maca Chocolate Chip Protein Shake, and Pumpkin Chai Protein Shake and made many others I have posted on Instagram but when I made this version using espresso powder instead of espresso (great for those times you don’t have time to let your espresso cool or you don’t like affogatto drinks) and the Coco Whip I knew I had to post it as it is so thick and dreamy.

Pumpkin Spice Latte Protein Shake
1c vanilla almond milk or coconut milk, or non dairy milk of choice (used So Delicious Vanilla Almond Milk Plus)
1/3c pumpkin puree
1 tsp pumpkin pie spice
pinch of cinnamon
2-3 tsp espresso powder
1 scoop vanilla protein (used Vanilla Vega Sport Protein)
1/2c coconut whipped cream (used So Delicious Coco Whip Lite)
drizzle of caramel, optional*
*You can use a blend of equal parts raw agave, pure maple syrup, and Justin’s Vanilla Almond Butter blended together or blended together 4 medjool dates, 1/4- 1/2 c warm water, 1/4 pumpkin puree, pinch sea salt, 1 TBSP pure maple syrup for a pumpkin drizzle. I also have a lucuma caramel sauce and other caramel drizzle versions search caramel on the blog.
In a Vitamix, or high-speed blender, blend together milk, pumpkin puree, spices, espresso powder, and protein powder together until smooth. Add ice as desired and blend until smooth. Pour into a glass, top with whipped cream and optional caramel drizzle. Enjoy!
