That time of year, to enjoy everything pumpkin! You can add me to the list of people that go crazy for everything pumpkin and apple in the fall. I shared my Pumpkin Protein Power Balls last year that can be made with dried cranberries or chocolate and although these don’t have the add-ins that those have they are simply delicious! Made with pumpkin seeds (pepitas), one of my favorite almond butters, protein, pumpkin pie spice, and maple syrup for a hint of sweetness. They are great with coffee (or your pumpkin latte, don’t worry I won’t tell anyone), after your cool fall morning run, or perfect for packing for a hike to enjoy the changing fall colors.

 

Pumpkin Spice Power Balls

Makes 12-24 (made 20)

1 1/2 c oats, gluten-free

1/2c pumpkin seeds, also called Pepitas

1/2c vanilla protein powder (used Vega Sport Performance Protein Vanilla)

2 tsp pumpkin pie spice

2 tsp coconut palm sugar

1/3c almond butter or nut/seed butter (used Justin’s Vanilla)

1/4c maple syrup (or honey or agave will also work)

2TBSP pumpkin puree

 

In a food processor pulse oats and pumpkin seeds to a course to fine crumble depending on preference, I tend to go more towards a fine crumble but not flour texture. Add in protein powder, pumpkin pie spice, coconut palm sugar and pulse just to combine. In a medium bowl mix together almond butter, pumpkin puree, and maple syrup until smooth. Add in the dry mixture from the food processor into the wet mixture. Using a spatula or clean hands mix well, and form into balls. Store balls in a sealed container in the refrigerator or freezer (for longer storage) until ready to enjoy.
