Quick Healthy Oatmeal Raisin Cookies

 

Today is National Oatmeal Cookie Day! Whip up these quick, easy, healthy Oatmeal Raisin Cookies for you and or your little ones this afternoon! It is snowing here and that always puts me in a baking mood and the girls will love having a couple of these cookies and a steamer. These cookies are so healthy you could even make them for breakfast!

 

Makes about 12-15 cookies

1 3/4 c gluten free oats

1/4 c unsweetened natural applesauce (used our homemade applesauce) or mashed banana

1/4 c milk (used Silk Unsweetened Almond Milk)

3 TBSP brown sugar (or 1/4 coconut sugar)

1 tsp pure vanilla

1/2 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

1/4- 1/2c raisins

 

Preheat oven to 350. Place all wet ingredients, sugar if using, cinnamon, and salt, into a blender, Magic Bullet, or food processor. Blend. Add oats, baking soda, blend until oats are chopped and well combined. Stir in raisins. Drop spoonfuls onto cookie sheet. Bake 10 minutes. Let cool a couple of minutes and remove from baking sheet and place on cooling rack. Enjoy!
