Over time some recipes get push down the list to post when I make others I get really excited about posting. This has happened a number of times especially last year when I was making up a lot of posts ahead of time to post while we were over in Ireland. My computer had crashed right before it and while I got a new computer and thought I got everything squared away I found out months later there were a bunch of posts that I had made and written up that I didn’t post. This is one of them. I actually photographed and wrote up this recipe back in June of last year, almost a year ago!! Crazy I know! I have about a half dozen of them and I debated on not sharing them as I didn’t like the photos or for some reason or another. I had planned on re photographing as well but new ideas came, or I would remake it and forget to photograph it. So I decided I would just post them as is here and there, maybe as a reminder to myself of where I was a year ago, or maybe just to remind me to check my drafts in WordPress more often.
Another coffee smoothie! Berry White Lattes, Lite White Berry, Berry White Mocha, it has had many names over the years at a coffee house here and changed a little with time. It was one of my favorites in the past and one day when grabbing coffee and playing cards with my youngest and father in law I got an iced one. It was delicious but has gotten much sweeter over the years. So I decided to whip up one at home making it less sweet and even adding my favorite protein powder. Chocolate is a real treat but vanilla is delicious as well.
Also over the year since I made this I find that I really like it with the Vega Performance Vanilla and Chocolate as they are creamier and richer making this a real treat!
Raspberry Latte/Mocha Smoothies
Makes 1
1 c almond milk, coconut milk, or non dairy milk of choice (use So Delicious Unsweetened Vanilla Coconut Milk)
1 c fresh or frozen raspberries, frozen raspberries will produce a thicker smoothie
1 scoop vanilla or chocolate protein powder, optional (Vega Protein Smoothie Viva Vanilla or Chocolate*)
ice, optional
2 shots espresso
sweetener to taste as desired, optional
*Or Vega Performance Protein or Vega One based on nutritional needs when making it.
In a Vitamix, or high-speed blender, blend together milk, raspberries, protein powder and ice if using. Test for sweetness and adjust to taste. This will depend on if sweetened milk was used, raspberries, which protein powder, and personal taste. Pour into a glass and pour espresso over the top. Enjoy!

If you are ever by a Caribou you have to try the Lite White Berry with Raspberry (a white chocolate mocha with raspberry) if you haven’t already! You can also get it with dark chocolate.
