Thanks for joining Deborahย and me for Meatless Monday. I had planned on posting one of the power bowls we have been enjoying recently but this weekend got away from me, like the last two weeks have, and I’m still “behind”. ย I’m not ready for school to start and summer to end. We have so much to fit in these last couple weeks and so much to do before things really get busy! This one was too good not to share though so I decided to grab a glass of wine last night and get it posted, since summer and berries are only in season or awhile longer.
Not sure when a shift in our house occurred but we use to make granola all the time. We went through so much at times I couldn’t keep up. I thought it would be fun to make some granola with the girls. They use to love making it with me and we would come up with a new flavor every month to mix up our favs. Well they weren’t interested. It was ok I went in the cupboard to grab some and we didn’t have much just 2 bags and one was expired. We eat muesli, my Whole Me Clusters, chia seeds, ect and I guess I never realized how much things had changed. It has also been awhile since I had a parfait so my oldest and I decided to switch things up and make one. Of course her bring the queen of chia seeds those had to be added, otherwise I was thinking muesli or chopped nuts. Things worked out, like they usually do and this combo was so good! You can switch up the raspberries for blueberries or strawberries but we’re loving the raspberries right now and they are so pretty and brighten up the parfait! She isn’t a huge fan of coconut like her mom but liked the caramel coconut chips over toasted coconut. I’m not arguing because they are one of my favorites. You can use what you have on hand or what you like best. Perfect for breakfast or snack this parfait is quick and easy, and it tastes as good as it looks! It’s also perfect to make in a jar ahead of time to grab and go in the morning or in my case sometimes to soccer, gymnastics, or where ever I have to run the kids after school.
Raspberry Pineapple Coconut Chia Parfait
Makes 1 serving
1 container (5-6oz) vanilla or plain coconut yogurt, or yogurt of choice (So Delicious Vanilla Greek Style Coconut Milk Yogurt)
1/2c diced pineapple
2 TBSP toasted or caramel coconut (Navitas Naturals Caramel Coconut)
1 TBSP chia seeds
1c fresh raspberries
Mix together yogurt and pineapple, if using plain yogurt add sweetener of choice as desired. In a glass or bowl layer half the fresh raspberries, half the pineapple yogurt mixture, all of the chia seeds, all the coconut, remaining raspberries, pineapple yogurt mixture, and garnish with a couple coconut pieces. Or you can just put the yogurt in a bowl, top with raspberries, and top with chia and coconut, or as desired. Enjoy!

My girls and I love it! Of course I wish it had more protein and less carbs like traditional yogurt but it’s delicious! They now sell the So Delicious Yogurts at Super Target!

Thank you Deborah! Next time you’re at Super Target or Whole Foods you’ll have to pick one up to try! I like the unsweetened vanilla and add a little stevia if I want, otherwise there is vanilla that is sweeter (worked well in this recipe) or Chocolate, Raspberry, Passionate Mango (oldest is loving this one right now) and a couple others. I just wish it had more protein and less carbs like other traditional yogurts. They have a greek version that is thicker that I use to love but it’s got more sugar.

Oh yes you could easily use any yogurt you have and swap the coconut out for cashews or just omit and do the pineapple, yogurt, chia seeds, and raspberries. I love when my creations just inspire and people adapt them to what they have and love!
