Our raspberries are in full swing! I was a little worried as we went out to pick some that looked almost ready a couple days earlier and the birds had eaten them. I got some pinwheels out there to keep them away before the berries fully came in and we have buckets and buckets of berries! The girls and I have been out there picking them and of course we just picked over 5qts of blueberries the day before we started going out there and picking our raspberries but that is perfectly fine as according to my daughter we are fruitivores, yep we love our fruits (and veggies). Speaking of that we have been going through watermelon like crazy for over a month now! I have been buying at least 2 a week and I try to freeze some for smoothies and slushies but every time I turn around the bowl is empty! As we picked a lot of berries I have been eating them daily for breakfast. One morning I was eating the last of one bucket and at the bottom there were a bunch of smashed berries. Probably from the weight of all the berries and they don’t last too long anyways. I also noticed there was some watermelon that was in the fridge and one still on the table. It looks like the watermelon consumption has tapered a little with all the berries in the house (it also could be the fact that we have cherries, a flat of mango, a dozen peaches, grapes…. ) so they have lots of options. I decided to clean out the fridge a little and whip up some raspberry watermelon popsicles. These can be blended or layered with raspberry ribbons. My oldest likes them blended together, my youngest and I love the layers so we get the watermelon and than the tart raspberries. Either way they are delicious and healthy! Healthy quick popsicles are a must in the summer and when the girls get hot from jumping on the trampoline, playing outside, playing soccer, or after gymnastics they can grab a quick snack that I always say yes to. I even let them have them for breakfast, yes because really it is the same as having fresh fruit or a smoothie but we all know sometimes things are just fun and taste better on a stick! They also work great when you have a sweet craving and you just want a popsicle instead of getting sucked into eating a big bowl of fruit! We really can’t be the only ones that do that and polish off a whole watermelon in an hour.

 

Raspberry Ribbon Watermelon Popsicles
Makes 6 popsicles
1lb watermelon chunks
1c raspberries
pinch of sweetener of choice
pinch of pink Himalayan salt

 

In a Vitamix, or high speed blender, blend together watermelon and salt. You don’t need a lot of salt, just a pinch, but it really brings out the flavor. If layering you will want to pour your pureed watermelon into a small container and blend the raspberries and sweetener of choice separate. Otherwise add raspberries and sweetener of choice to taste and blend smooth. For non layered popsicles pour into popsicle molds and freeze per mold package instructions. For layered popsicles I like to use our Zoku Quick Popsicle Maker. Pouring in a little watermelon puree into eat mold, freezing for 1-2 minutes, adding in the raspberry mixture, freezing 1-2 minutes, and so on. They really don’t take long as you need the top of the layer to just set. I place my mold in my freezer (bottom pull out freezer) and open and pour, shut, open and pour, shut and layer them every minute. After the last layer Iet them sit for about 5 minutes before removing and placing in a popsicle holder. These are also great to make while making breakfast, lunch, or dinner as they don’t take long but you don’t have to stand and watch the clock. Remove when ready and enjoy!
