What’s better than a healthy salad? A pretty one! When I first laid eyes on the Heirloom Red Spinach and it’s beautiful purple hue I fell in love. Yep crazy I know but it is so pretty you can’t help but smile when you eat it. Since I have seen it pop up in other places. One of my favorite salads to make with this spinach is a simple salad with pears, or also delicious with apples, feta, walnuts, and pomegranate vinegar. The Pomegranate Vinegar is also from Trader Joe’s but if you don’t have one close Annie’s also makes a Pomegranate dressing as well as a few other brands or you could use a balsamic vinegar or dressing of choice. So pretty I also made this salad to take to an extended family gathering the only thing to note is add the pears and cheese right before serving as sometime the red coloring will bleed and your pears and cheese can turn pink. Full of flavor, fresh, colorful, healthy, and quick, what more do you need? If you want to add protein you can add chicken, or chicken-free strips!

Red Spinach Salad with Pears, Feta, Walnuts and Pomegranate Vinegar
Makes 1-4 servings
6 oz Heirloom Red Spinach, or red or green spinach of choice
1 pear, sliced or chopped (also delicious with apples)
2 TBSP- 1/4c crumbled feta cheese
2 TBSP chopped walnuts
2 TBSP Trader Joe’s Pomegranate Vinegar, or Pomegranate or Vinegar/Vinaigrette dressing of choice
In a bowl mix spinach with the pomegranate vinegar, divide mixture into bowls or plates. Top with pears, feta, and walnuts. Enjoy!
