I really like beets and will make chocolate beet shakes. It was a cold morning and I wanted a chocolate beet shake but had to break this chill and decided to turn the shake I wanted into a delicious warm bowl of oatmeal. This oatmeal was so filling I couldn’t finish it all but saved it for later and enjoyed it cold.
Red Velvet Oatmeal
Makes 1 serving
1/2 c oats, gluten free
1/2 c beet puree or finely chopped beets (I use pre cooked, cooled beets)
1/2 c non dairy milk of choice (used So Delicious Unsweetened Almond Milk Plus, for the extra protein
1 scoop chocolate protein powder, or raw cacoa (used Vega One Chocolate)
dash of cinnamon, optional
1 TBSP sweet cacao nibs, chopped dark chocolate, or chocolate chips (used Navitas Naturals Cacao Sweet Nibs)
I like to make my oatmeal on the stove, alternatively if you are one to make them in the microwave either way will work. Make oats with water. Once oats have cooked stir in beet puree or chopped beets, milk, and chocolate protein powder. Serve in a bowl and top with sweet cacao nibs or chopped dark chocolate. Enjoy!
