If you haven’t heard Taylors Swift has a new CD, 1989, that is released today including her hit single Shake It Off! When we were in Ireland in August a friend sent me a message the day the song came out and my oldest heard it and I would be shocked if people couldn’t hear her scream back in the US! Both girls sang and danced to the song over and over while we were there. I actually pre-ordered the cd (only 1 which is already an issue between the girls) along with a shirt over a month ago. My oldest, she will be 11 next month, is a huge Taylor Swift fan. We have been in Nashville a few times over the years and both times she hoped she was going to run into Taylor at the store, restaurant, ice cream shop or where ever we were. I’m not going to lie I think I heard 22 and a few other songs from her last CD so much I wanted to fling her cd out the window. However I love her new Shake It Off and could probably listen, and shake it, all day!
We love shakes, smoothies, and it was only fitting we made a Shake It Off Shake to celebrate the release of the cd! My oldest came up with so many ideas… because the ones I had were “so not Taylor’s style”. She wanted red and black but finally after she searched for Taylor’s favorite foods she came up with pineapple and watermelon. Since watermelon isn’t really in season in October we went with pineapple! This pineapple shake has lots of pineapple, coconut milk, a hint of cinnamon, lots of coconut whipped cream, and GOLD SPRINKLES! If you are going to be shaking it a lot or already did shake it off maybe you need a little more, like me, and you can add some vanilla protein powder.
Making this shake is one of the times I wish I had a cooking show because it really was a show! Me cutting up a pineapple to look like a guitar, for a prop because it was in someone’s head that she would sip on the shake, her sister would play the pineapple guitar, and I would sing into my whisk. Yep if it wasn’t for my husband being away from work we would have had a picture of that included in the post. Then the making of the shake, with Shake It Off playing, us singing really loud over the noise of the Vitamix, and there may or may not have been a big mess of whipped cream and sprinkles everywhere from shaking it while making it. All the laughs, dancing, singing, fun, and memories my girls had making it I didn’t care if the kitchen was covered in whipped cream and sprinkles!
Weather you are a Taylor Swift fan or not this shake is delicious, but we highly recommend listening to Shake It Off while making it and enjoying it!
Shake It Off Shake
Makes 1 shake
1c vanilla coconut milk (used So Delicious Vanilla Coconut Milk)
1/4c crushed pineapple
1-1 1/2c frozen pineapple chunks*
pinch of cinnamon
1/2c coconut whipped cream (used So Delicious Coco Whip)
1 scoop vanilla protein powder, optional
1c ice, optional
*Fresh unfrozen can be used but it won’t be as thick and cold so I place our fresh pineapple in the freezer. If using fresh you will probably want to add ice.
Spoon crushed pineapple into the bottom of a glass and set aside. In a Vitamix, or high-speed blender, blend together coconut milk, frozen pineapple chunks, protein powder if using, and a pinch of cinnamon until smooth. Add ice if desired or needed to thicken. Pour into the glass over crushed pineapple. Top with whipped cream and a shake or two of sprinkles. Enjoy!
