Happy Monday! This week for Meatless Monday we have a real treat for you, S’more Chow! Every year for family camp I bring up S’more Bars. They are basically the same as Rise Krispie Treats but using graham cracker cereal (Golden Grahams for non gluten-free), marshmallows, and chocolate. I make them super packed and also toast some marshmallows for the full s’more flavor. They are always a hit even if they get a little messy in the heat. I had planned to make them again this week not even thinking about the fact that they are very hard and chewy and S now has braces.

A few weeks ago while S was at a friends house she came home requesting we make Puppy Chow asap. I hadn’t had it in years and said ok I’ll pick up the stuff and you can make it next week at grandma and grandpa’s house. Well she did and quickly I was reminded why I never make it, it’s so good and so addicting!! Yep I had a little too much and got a tummy ache but man was it good. I remember my mom making it all the time growing up and even buying a special dog dish to serve it in at parties.

I thought maybe I should bring this to the family camping trip but was told nope I had to make what I make every year, my S’more Bars. Later that night it dawned on me that there was no way S was going to be able to eat them with braces. Even if a bar was cut into small pieces it would be hard and didn’t want to chance her not being able to have them since she loves them so much. Of course this just means we go with an idea we both love and combine the two to make S’more Chow!

Of course we had to test it and last week with all the soccer games was the perfect time since the girls were burning off so much energy and we were on the go so much. Not surprised it was a hit! Hmm shocking, not really. Handfuls of graham cereal, some with a chocolate peanut butter marshmallow (marshmallows in the coating optional) coating, covered in cacao and powdered sugar and tossed with marshmallows, what’s not to love? Yep we even ate it after it baked in the car and it wasn’t that messy but did leave chocolate on our hands. This version is vegan but not gluten free, there are graham cereals that are gluten free but I didn’t try it with any of them.

Perfect for camping, your next summer party, sleepover, or just for munching on at the sidelines of your next game. Really you don’t need a reason to enjoy it but I will highly suggest you have friends to help you eat it. Not that you will want to share it but trust me it’s better shared!

Ingredients
  • 12-13 c graham cereal, divided Golden Grahams, vegan but not gluten free
  • 1 1/2 c chocolate chips Enjoy Life Dark Chocolate Chips
  • 1/2 c peanut butter Peanut Butter & Co Smooth Operator
  • 2 TBSP coconut oil
  • 2/3 c cacao powder
  • 1 c powdered sugar
  • 1 10 oz bag mini marshmallows Dandies Marshmallows

  • 2 TBSP coconut oil
  • 2/3 c cacao powder
  • 1 c powdered sugar
  • 1 10 oz bag mini marshmallows Dandies Marshmallows

Instructions
  1. In a large glass (or microwave safe) bowl add chocolate chips, peanut butter, and coconut oil. Microwave for 1 minute, stir, if wanting to add marshmallows to the mix add 1 cup of marshmallows and heat in 30 second intervals until melted, about 1 minute 30 seconds to 2 minutes. If not adding marshmallows just heat until chocolate mixture is melted.
  2. Add in 9 cups of cereal and carefully fold to coat the cereal.
  3. In two ziploc bags add 1/3 cup cacao powder and 1/2 cup of powdered sugar to each bag. Seal and mix.
  4. Add half the chocolate coated cereal mixture into each of the ziplocs, seal, and shake to coat. Add remaining marshmallows and cereal to the mixture dividing between the two bags.
  5. Enjoy! Store in an airtight container.
