Granola is a staple in our house and usually I make healthy granola but sometimes we need to have a little fun. While this is still healthy I did add in some chocolate (still good if you use dark chocolate) and marshmallows as I needed to find yet another way to enjoy one of our summer time favorites, s’mores! Yep I figured s’more granola was the perfect thing to pack for camping or a hike to enjoy for a snack or for breakfast by the campfire! I wish I would have taken a picture of the girls eyes and how big they got when I said s’more granola. The recipe below is a guide again add in more or less of what you like for add-ins (marshmallows, chocolate, graham cracker pieces). We made two batches as each of the girls wanted something different. We made one batch with dark chocolate and marshmallows, no graham cracker pieces. The other with roasted marshmallows (YES, tastes just like a s’more), chopped dark chocolate chunks, and graham cracker pieces (from left overs when making our Graham Cracker recipe into jumbo crackers for a cake, if you haven’t seen this I posted on Instagram and my Facebook page).

 

 

S’more Granola

Makes about 7-8 cups, depending on add-in

3 1/4 c oats, gluten free

2 TBSP ground flax seed

pinch of sea salt

1 tsp ground cinnamon

1/4c coconut palm sugar (Navitas Naturals)

1/4c raw agave, or honey (honey for non-vegan)

2 TBSP coconut oil, melted

1/4c unsweetened applesauce

1/3c almond butter, or nut/seed butter of choice (used Nuttzo)

2 tsp pure vanilla extract

1/3c dark chocolate chips, or chopped chocolate

1/2c mini marshmallows

1c broken graham cracker pieces (we used pieces from our homemade Graham Crackers)

 

Preheat oven to 325 degrees. Line large baking sheet with parchment paper. In a large bowl mix together oats, , cinnamon, salt, and flax seed. In medium mixing bowl mix together melted coconut oil, agave/honey, coconut palm sugar, apple sauce, nut butter, and vanilla. Add wet ingredients into the dry and mix together with rubber spatula until evenly coated.  Spread on prepared baking sheet. Bake 22-25 minutes, stirring half-way. If wanting roasted marshmallows sprinkle marshmallows over granola in the last 5 minutes and broiling if desired watching very closely as they can burn! Remove from the oven and let cool before adding chocolate, graham cracker pieces, and marshmallows.  Store in airtight container, and enjoy within 7 days for best taste. We also freeze granola to keep it fresh longer. Enjoy!
