Nothing screams summer like s’mores and since this weekend is the unofficial “start” of summer it has to include s’mores. No questions about that and we will be making s’mores up at the cabin. I also wanted to make something else for a snack on the lake or after a nature hike. I’m not sure why Krispie Treats scream cabin, maybe it was because my mom made them often as a kid. They are also quick and easy and I didn’t have much time on my hands. So I went to make Krispie Treats to take up there and had this idea to make them different. Not the hey just stir in some peanut butter but I had planned to add in dried strawberries and blueberries. After looking at the blueberries, which aren’t really blue, and tasting the dried berries I had second thoughts. Of course there is the peanut butter, peanut butter cup, sprinkles, or even popcorn, but I decided to whip up S’more Krispie Treats! My family also loves S’more Bars made with Golden Graham Cereal but I wanted to whip up Krispie Treats and they turned out great. No complaints and after my husband cut them into BIG bars and I asked if there would be enough for everyone he, as well as the girls, asked me to whip up another pan.
Going to the cabin this weekend or maybe a picnic, if you have 15 minutes you can whip up these delicious S’more Krispie Treats that will have your family screaming for smore too!
S’more Krispie Treats
Makes a 9×13 pan
3 TBSP butter spread (used Earth Balance)
3 TBSP coconut oil
1 1/2 bags Dandies Mini Marshmallows
8c crispy rice cereal
1c crushed graham crackers (homemade vegan Camp Crackers, aka Graham Crackers)
1/2c mini chocolate chips (Enjoy Life Mini Chocolate Chips)
In a large glass, or microwave safe bowl, heat butter spread, coconut oil, and marshmallows stirring every 30 seconds until melted and combine. Stir in cereal until combine before mixing in graham crackers and lastly chocolate chips until just combine but not over stirring as the mixture is still warm and will melt the chocolate. Press into a pan. Once cooled cut into bars. Enjoy!

What amount of marshmallows did you use? I have some floating around here it this would be perfect to use them up, but don’t know anything about Dandie’s.
