Monday is National S’more Day, yes something so delicious really deserves it’s own day to be celebrated. Don’t worry I have another s’more recipe coming Monday but this is a must and I wanted to make sure you had everything and were prepared!
It’s summer and that means cool treats and delicious eats, and if you follow me on social media or are a regular reader you know one of our favorite summer flavors is s’more! We are always wanting some more s’mores! So it would come as no surprise that if we could make an ice cream flavor or milkshake we would make s’more. We have had a rough patch with some sick family members and when we aren’t at soccer we were at the hospital or helping out family members. The girls were wanting a sleepover that was suppose to happen for a couple weeks but kept getting rescheduled and with an upcoming trip and the end of summer break in sight it I knew I had to fit it in. So that is just what we did. Some of our good friends daughters’ are the same age as our girls and they have become even better friends as they get older. One of them has some food allergies and being the “foodie” I am when she or they come over I am always looking for new things to make or for her to try that she might not have already. I also have all of us eating the same thing so her food isn’t different and try to make it fun. We found some new pancakes to try for breakfast at Target, which I posted on Instagram and the girls picked spaghetti for dinner so nothing to out of the ordinary other than I can’t remember the last time we had spaghetti. We don’t cook too much inside in the summer and spaghetti while it use to be an every week eat years ago doesn’t make a regular appearance anymore but I had some gluten free noodles I love that she hadn’t tried so I wanted her to try those.
Now to dessert…. While we could have gone with just ice cream or popcorn we had to do something fun. It was hot, late, and the bugs were really bad so doing a campfire and s’mores was out of the question. It would have been one of the first things I thought of as they all love campfire, s’mores, and my gluten free vegan Camp Crackers (aka graham crackers). That wasn’t going to stop the us from having s’more fun because I decided we would whip up S’more Milkshakes! We had everything we needed and they were a perfect cold delicious treat to enjoy outside or inside when they decided they had enough of the bugs. I have said it before but something about cashew milk and ice cream reminds me of cookie dough or graham crackers, there is that warming sugar flavor more than a nut flavor to me. I knew So Delicious Creamy Cashew Ice Cream would be the perfect ice cream base for this shake. Add in marshmallows, chocolate chips, and my Camp Crackers (graham crackers) and you have a delicious treat. Make it as thick as you want with big chunks to enjoy with a spoon or blended more to enjoy with a straw. I went with a little more blended to make it sippable this time as I was hoping to enter a recipe into the So Delicious and Go Dairy Free Snackable Recipe Contest and was waiting for that “this is it” moment before entering a recipe. I have many I could enter and many ideas but to take the time right now with everything going on to make one of my ideas or write up a new post I need to really feel it. I have a large que of recipes I am trying to get posted which is great for times like this when life gets crazy. So Sippable it is for the contest but feel free to make yours thicker and chunkier and enjoy it as desired, either way it is delicious I promise! You know that annoying noise you make when you are drinking out of the straw and you are trying to get that last drop out of your empty glass, really you know there isn’t any left but you keep trying anyways? Yes that noise will be made and this is one of those times I loved hearing it and had to giggle! To add to the fun instead of topping with whipped cream, don’t worry we saved that to use on their pancakes for breakfast with sprinkles, top with marshmallows and torch until lightly toasted. Again either way it is delicious but I felt it was the perfect way to top this shake and add a little fun to this summer sleepover night.

Makes 2 servings
1 pint So Delicious Creamy Cashew Ice Cream
1c So Delicious Vanilla Cashew Milk, or Unsweetened Vanilla Coconut Milk
1/3c mini marshmallows (used Dandie’s Vegan Marshmallows)
1/4c chocolate chips (used Enjoy Life Chocolate Chips)
2 of my Camp Crackers, or 1 sheet graham crackers of choice
1c mini marshmallows (used Dandie’s Vegan Marshmallows)
1c So Delicious Coco Whip
In a Vitamix, or high-speed blender, blend together ice cream and milk until creamy but don’t process too long as you want a thick milkshake. Break the graham crackers into big pieces and add to the ice cream with the marshmallws and chocolate chips, pulse to blend in. You can blend a little for big chunk or a little longer so you can sip it through a straw without getting the pieces stuck. Pour into two glasses and top with whipped cream or marshmallows, toasting the marshmallows with a kitchen torch if desired. Sip and enjoy!
