Give me s’more, some more S’more Power Balls! For those of you who share in my, and my families, love for s’mores you are in for a real treat! I often try to pack a lot of health and nutrients into my power balls but trying to make them fun. Power balls are a go to for me for fitness fuel, weather it be pre or post workout, and also are great for a healthy snack to keep on hand when I need a little something. I often reach for fruit or veggies in the summer (the amount of fresh produce we go through in the summer is crazy!) but there are times I want something different and when I don’t need a whole bar (packaged or homemade) these are great. My family, the girls especially, like my Power Balls and in the summer they need more fuel with soccer, gymnastics, and our families constant on the go shenanigans. While these S’more Power Balls are packed with protein, are gluten free, grain free, and vegan they do pack a little more fun and sugar content than many of my other versions and are a perfect combination of healthy and treat. With 1/4 cup of chopped marshmallows per batch (18-24 depending on size) they honestly aren’t that bad and in my mind the fun factor they add is totally worth it. For chocolate I like to use chopped Vega Maca Bars but you can use any chocolate that fits your needs or you have on hand (or use the other version posted with chocolate peanut butter). Than rolling in graham cracker crumbs is optional but really adds to the flavor and fun. I use my gluten free vegan graham crackers. They are very filling and are perfect for satisfying that sweet tooth if you have one.

Now there are 2 versions, why, well because my family was split on which ones they like best. So I thought I would share them both, like I often do, and you can pick your favorite or come up with your own. While I think the vanilla protein version made with almond butter has the closest taste to a s’more the chocolate protein and chocolate peanut butter hits the spot too and has great texture! Both are winners in our house as they disappear quick as I grab one or two after a workout or in the afternoon, the girls grab a couple to put in a bag for soccer or gymnastics (usually both girls as we have really late or early dinners in the summer with our crazy schedule and two nights a week we are double booked with both having soccer games). They are also great to take on a hike, yep s’mores can be enjoyed with no fire needing to be built, bike ride, or kayaking. Pack some for your next adventure!

S’more Power Balls (vanilla protein, almond butter version)*
Makes 18-24 depending on size (I usually make 18-22)
1/3c cashew meal
1/2c almond butter (used Justin’s Vanilla Almond Butter)
1c vanilla protein powder (used Vega Sport Vanilla)
1/3c + 1TBSP maple syrup, or honey can be used for non vegan
1/4c chopped marshmallows (used Dandies Marshmallows)
1/4c chopped chocolate (used Vega Maca Bar, Enjoy Life Chocolate Chips for kids)
1/3c ground/finely crushed graham crackers (used my recipe for Gluten Free Vegan Graham Crackers)

*Variations:
If using plain raw almond butter you can add an optional 1/2 tsp of vanilla and 1TBSP coconut palm sugar)
For Chocolate Protein, Chocolate Peanut Butter version we used Vega Sport Chocolate, Peanut Butter & Co Dark Chocolate Dreams, and omitted the chopped chocolate.

 

In a medium to large bowl mix together cashew meal and protein powder. Chop or using a kitchen scissors cut your marshmallows if you haven’t already. Add to the dry ingredients and mix with your hands. This will keep them from sticking together and you can also pull them apart into smaller pieces. Add in chopped chocolate if using. In another bowl mix together nut butter and maple syrup until smooth. Pour wet ingredients into the dry and mix until the mixture comes together in a ball. I like to start with a spatula and than use my hands. Roll into balls and than roll the balls in crushed graham crackers. Store in the refrigerator or for longer storage store in the freezer in a air tight container. I like to place in the refrigerator to set and than move to a plastic zip loc bag and store in the freezer. Remove as needed from the freezer and let thaw a few minutes to soften. Enjoy!
