It’s Girl Scout cookie time! If you haven’t been asked by a dozen girls to buy cookies, watch out they will be asking you soon! I use to be a Girl Scout and really can’t resist some of those delicious cookies! I would say I have two favorites but then I think of others. There are the Thin Mints, Samoas, oh and then the chocolate peanut butter Tagalongs. There also use to be something about those shortbread cookies but then they changed them. We all have our favorites. One of my good friends loves Samoas and I even made her a cake one year that was a jumbo Samoas cake and it was delicious to say the least, not healthy but oh so delicious!! There is a healthier way to get your fix though with this Samoas Cookie Protein Shake! Yep so good and guilt free! So go ahead and have a cookie… protein shake!
What is your favorite Girl Scout cookie?
Samoas Cookie Protein Shake
Makes 1 serving
1c almond or cashew milk (used So Delicious)
1 scoop vanilla protein powder (used Vega Sport Protein, Vanilla)*
2 dates, soaked and pitted (soaked for 10 minutes in warm water, optional)
2 TBSP toasted coconut (to toast your own sprinkle finely shredded coconut on a baking sheet and place under a broiler on low watching carefully until toasted)
1 TBSP sweet cacao nibs or chocolate chips (used Navitas Naturals Cacao Nibs)
1c ice, optional
*To make without protein powder use 2 tablespoons cashew or almond butter.
Optional toppings:
Toasted coconut
Chocolate drizzle (easy chocolate drizzle mix together equal parts melted coconut oil, agave/honey, and cacao/cocoa powder)
Cacao or sweet cacao nib
In a Vitamix, or high-speed blender, blend together milk, protein powder, dates, toasted coconut, cacao nib/chocolate, and optional ice until smooth. Pour into a glass and top with optional toppings, enjoy!
While I do receive some Vega products from time to time, which I used as an option in this recipe, I do purchase much of it on my own. It has been my plant-based protein of choice since before I started blogging. Even though most Vega products used are purchased by myself I do add this disclaimer. Just don’t break their poor little hearts! I think this shake is just as delicious and I’m full and happy after drinking it, can’t say the same for a box of Somoas cookies…
