Tomorrow, September 6th, is National Coffee Ice Cream Day! It’s no secret that I love coffee (just search espresso or coffee on my blog) so this is one day I had to celebrate! My favorite coffee ice cream would have to be So Delicious Cappuccino Cashew Milk Ice Cream! Followed very closely by a Georgia Mud Fudge I have had which is coffee ice cream and Oreo pieces. I could easily do this with my favorite So Delicious ice cream but fear I would lose control so I will just save that for when I need something special. Haha! Instead of just eating my ice cream with a spoon in one hand and a pint in the other I decided to have a little fun! I decided to make a Sparkling Coffee Float! Yes adding more coffee to my coffee ice cream and cream soda. Last year I had a sparkling coffee drink in a NY airport and have made it a few times since then. It is just ice, espresso, sparkling water, and simple syrup. Instead of simple syrup I use Zevia Cream Soda and add a scoop, or two, of my favorite Cappuccino Cashew Milk Ice Cream. Of course I went to make it and I was out so I had to run up to Whole Foods and get a couple pints. Which of course meant I had to purchase other things that I really didn’t need, Whole Foods is just like Target I can’t get out with just the things I need.

So back to the float, so quick to make, oh and since National Coffee Ice Cream Day is on a weekend I also included a special adult version option which I usually don’t do but hey moderation! Another option is just to enjoy your ice cream affogato, another one of my favorites and even better with cappuccino ice cream but can be made with chocolate, vanilla, or even caramel! Just pour cold brew or for a true affogato a couple shots of espresso over the top of your ice cream!

Sparkling Coffee Float
Makes 1 serving
2 shots espresso, or you can also use cold brew
1/2-1 can cream soda (used Zevia Cream Soda)
1-2 scoops cappuccino ice cream (used So Delicious Cappuccino Cashew Milk Ice Cream)

Optional for an adult beverage add a shot of plain or vanilla vodka (dairy free), or RumChata (not dairy free).

Place espresso in a glass with ice cream and top off glass with cream soda. I like my coffee over top so I add my ice cream and fill my glass 2/3 full with cream soda and then add my espresso. Doing so that way you will get the espresso first instead of having it mix in with the cream soda. I enjoy either way so try them both. Enjoy!
