I know the name of it is a mouthful but so is this salad! This fresh salad makes a great lunch, light dinner, or side for your favorite dinner. Have leftover quinoa this is a great use for it for lunch, which was the case here. I make quinoa salads often just adding whatever sounds good at the moment or what we have a lot of or what needs to be used up.
This recipe is broken down for one serving but it easy to convert to family amounts.
Spinach Quinoa Cucumber Tomato Salad
makes 1 serving
1c cooked quinoa (1/4c pre cooked)
1 vine ripe tomato, cut into wedges
1/4-1/2 an avocado
2 TBSP chopped green onion
1/4-1/3 cucumber, chopped
handful of baby organic spinach, rough chopped
Salt & Pepper to taste
I like to make this salad when the quinoa is warm, not hot, so it slightly wilts the spinach. In a bowl mash avocado, quinoa, and spinach together with your hands. Add in cucumber and green onion, reserving a little green onion for garnish if you want. Season with sea salt and pepper to taste. Plate with tomato wedges, sprinkle with remaining green onion, and enjoy!
