Strawberry Shortcake Power Balls

It is summer and I am all about berries! I decided to whip up these Strawberry Shortcake Power Balls for before the girls soccer and for myself. I think my oldest could have sat there and ate them all if I would have let her!

 

Strawberry Shortcake Power Balls

Makes 12 balls

3/4c dates

1/2c ground flaxseed

1/4c hemp seeds

1 tsp vanilla

1 scoop Vega Energizing Smoothie, Almondilla (also works with Vega Performance Protein Vanilla.Vega One French Vanilla will work but not the same “Strawberry Shortcake” taste)

1/2c dried strawberries, rough chopped, NOT crispy freeze dried

1/2c popped organic amaranth, directions here

1TBSP coconut oil

1TBSP water

 

In a food processor blend hemp and flax together, until hemp seeds are broken up.  Add vanilla and dates and process to crumbled and combined. Add in strawberries and pulse until combine. Pour mixture into a large bowl and mix in popped amaranth and energizing smoothie mix, I do this with my hands. Add coconut oil and mix together, if needed add in a little water I used 1 tablespoon. Mixture should stay together when pinched between two fingers. Roll into balls. Store in the refrigerator or freezer. Enjoy!
