Visions of sugar plums must have been dancing in my head, I had to make a Sugar Plum Smoothie when I woke up one morning! Not sure if it is because we are getting into the holiday season or I am still craving plums like crazy like I have been since we got back from Ireland a few months ago. They really did have the best plums and I enjoyed them every day we were there. After making that first smoothie of course I had to play a little and make a couple different versions. Settling on one with chia seeds, one with protein powder, and then a combination of both. All thick, filling, and delicious, which one I make depends on my needs when I make it. With plums not always being available dried plums, prunes, are always an option. Just adjust accordingly adding a few and taste testing adding more as needed and leaving out the dates if sweet enough. If only this smoothie looked as pretty as those sparkling sweet little sugar plums in my dreams!

Sugar Plum Smoothie
Makes 1 serving
1c coconut milk, or non dairy milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk)
2 plums, pitted (also tasty with dried plums, prunes, if plums aren’t available)
1-2 Medjool dates, pitted (used 1)
1-2 TBSP chia seeds, optional*
1 scoop vanilla protein powder, optional* (used French Vanilla Vega One, also delicious with Vanilla Chai Vega One)
Ice
*Made one with chia seeds only and the other with 1 tablespoon of chia seeds and French Vanilla Vega One.
To make a really thick shake using the chia seeds soak 2 tablespoons of chia seeds in coconut milk in the refrigerator overnight or for at least 20 minutes. In a Vitamix, or high-speed blender, blend together chia seeds and milk, plums, dates, and optional protein powder. Blend smooth, add ice if desired. Enjoy!
Otherwise you can just blend plums, dates, optional chia seeds, protein powder, and ice in a Vtiamix or high-speed blender until smooth. Enjoy!

Thank you! I guess I forgot to add it is also good with dried plums (prunes) and I just adjust to taste and sometimes add a date and sometimes I don’t depending I like a balance of both though! Happy healthy holidays and Merry Christmas Brittany!
