One of my favorite breakfast pastries is an apple strudel, which is tied with apple turnovers! They are one of my weaknesses. I wanted to make a breakfast shake that is inspired by these pastries and not other apple desserts and not like the shakes I make in the fall or winter. I wanted it simple and clean and just a tiny hint of cinnamon. This shake is pure sweetness.
Summer Apple Protein Shake
Makes 1 serving
1 1/4c almond milk (used So Delicious Unsweetened Almond Milk Plus Protein, only 40 calories and 5 grams of protein!)
1 scoop Vega One French Vanilla or Vega Sport Performance Protein Vanilla (used Vega One French Vanilla)
1tsp lucuma powder (used Navitas Naturals Lucuma Powder)
1/2tsp gelatinized maca, optional (used Navitas Naturals Gelatinized Maca Powder)
1 apple, cored, cut into chunks, frozen (used a Pink Lady Apple)
sprinkle of coconut palm sugar and cinnamon
In a Vitamix or high-speed blender blend together almond milk, protein powder, lucuma powder and maca. Add in apple and blend until smooth. Pour into glass and top with a sprinkle of coconut palm sugar and cinnamon. Enjoy!
