We had some friends over to hang out, have the kids play, have dinner, and watch some fireworks from a nearby festival. I didn’t want to do the normal burgers on the grill and I love parties with “do it yourself bars” where everyone can make things how they want and you can sit there and cook together and talk and have fun, the kids always love it too. So we decided to do pizzas on the grill, and for dessert… dessert pizzas!
For the pizza crust we used the basic thin crust one my husband uses which can be found here. We used whole wheat white flour and rolled out using corn meal and granulated garlic. We split each batch of dough into two smaller crusts which were still big enough to have leftovers to send home with our guests. We made the kids the same size as well and there was plenty to sample them all if you desired.
We the following options(I am sure I will forget some):
Sauces: tomato sauce and olive oil
Cheese: parmesan, mozzarella, and fresh mozzarella cheeses
Meats: pepperoni, hamburger, and bacon
Veggies: bell peppers (multiple colors), tomatoes, onion, mushrooms, black olives, green olives, banana peppers, hot peppers, and basil
Other: macaroni and cheese (yep this one is my daughter’s favorite)
For the dessert pizzas we used the same crust recipe and rolled out using regular flour. We only made one and a half batches of dough and made 3 pizzas.
Toppings for the dessert pizzas:
Sauces: peanut butter (and the many varieties of Peanut Butter & Co), marshmallow fluff, sweetened ricotta cheese (added some sweetener and vanilla)
Toppings: strawberries, blueberries, raspberries, bananas, chocolate chips, marshmallows, honey
The method is the same for the regular and dessert pizzas. Prepare dough and roll out on a flat surface that is sprinkled with flour and or corn meal so it won’t stick. Top pizza with sauce and toppings of choice. Heat grill to medium/ medium-high and place pizzas on the grill when hot and cook until crust has nice grill marks and cheese has melted on the pizza. Remove from grill, let cool slightly, slice and serve. Enjoy!
