The girls and I came up with this one while in the car going to the grocery store. Not sure how the conversation started but they wanted to make floats, they wanted fruit, I wanted healthy, and as they narrowed down what they wanted and one of them said red and white… and both of them at the same time “AND BLUE!” We picked up the stuff and we made these Summer Strawberry Floats. They are perfect for 4th of July or can be customized with any flavors you like with in season fruits, the combinations are endless.

 

Summer Strawberry Floats

Makes 4 floats

2c hauled and quartered strawberries

2TBSP raw agave, or sweetener of choice

24oz sparkling water or coconut water (made some with plain sparkling water and some with CoCos Pure Coconut Water)

2-4c ice cream or sorbet (made ours with So Delicious Coconut Milk Vanilla Bean Ice Cream)

1/2c blueberries for garnish, optional

 

In a Vitamix or high-speed blender puree strawberries and agave. If using a high-speed blender and there are still seeds after you puree the strawberries you may want to strain them out and then blend with agave. Add sparkling water or coconut water to your strawberry mixture, alternatively you can place 1/4 of the mixture in the bottom of your glass and pour sparkling water or coconut water on top of it. Add a scoop or two of your favorite ice cream or sorbet or choice. Garnish with optional blueberries on a skewer. Enjoy!
