A few weeks ago I heard about a Bai recipe contest (we didn’t win a delicious looking cheesecake won) I had no choice but to consult the Bai fanatic in the house, my oldest daughter. I told her they were having a Superfood Recipe Contest and of coarse she jumped on it! We started tossing around ideas and set aside some time the following week while her sister was at gymnastics camp so we could have some quality mom and daughter time in the kitchen. We whipped all sorts of goodness! She is a chia seed freak so that was one of the ingredients she suggested. Avocado smoothies are another favorite right now but we have made a few of those already and we wanted something different. Well what screams summer more than smoothies…. POPSICLES! Yep and it fit great because while sitting on grandpa’s boat over the weekend we came up with a big long list of popsicle ideas, which we just now need to find the time to tackle that list! Finding time to eat them all won’t be an issue because with soccer every night of the week they make the perfect snack afterwards. So we played on her favorite avocado smoothie lately since in also included her favorite Bai5 Malaki Mango. Since it is a Superfood Smoothie Contest we went through some other superfoods she likes, we wanted it to be kid friendly with easy to find ingredients. If our Whole Foods or a local store carried dragon fruit or if it was easier to find we may have made a pink popsicle. So what superfoods did we pack into our popsicles? Well we narrowed it down to 5, why 5 well because my daughter wanted to stick with the magical Bai5 number 5. Which did mean she had to cut out chia seeds but we did add them to a few of our popsicles and added as an optional bonus ingredient. So lets check out our 5!
Bai5, Yep it has coffeefruit in it and no it doesn’t taste like coffee but it is packed with antioxidants.
Avocado, Avocados are one of the most nutrient-dense foods, avocados are high in fiber, folate, potassium, vitamin E and magnesium. No doubt, avocado is a healthy fat and is it a powerful SuperFood. Did I mention it is what makes this popsicle creamy and delicious?
Mango, This superfood is bursting with essential nutrients such as vitamin C, dietary fiber, polyphenols, and pro-vitamin A carotenoids. These are one of my daughter’s favorite fruits and for a good reason they are so naturally sweet and juicy!
Greens/Power Greens, We used Earthbound Farms Organic Power Greens which is a super-versatile mix of tender baby spinach, baby red and green chards, and baby kale. I could go on and on all day about what makes these greens a superfood, there is a reason your mom always told you to eat your greens and vegetables growing up. Greens have been shown to fight cancer, disease, and are packed with vitamins, minerals, omega-3 fatty acids, antioxidants, folate, chlorophyll, and phytonutrients. You can all the benefits and you don’t even taste them in these popsicles, now that is a win win when it comes to kids!
Kiwi, Kiwi are antioxidant superstars! They are extremely rich in Vitamin C, they also contain Vitamin E, folate, potassium, fiber, carotenoids, polyphenols, chlorophyll, and glutathione.
So now that you have some of the low down on what’s in our popsicles it’s time to make them! We make ours in our Zoku Quick Pop Maker because we are impatient sometimes and well they are ready in 6-7 minutes! We also whipped some up and put them in our standard Zoku molds and froze them overnight.
Super5 Smoothie Pops
Makes 6 Popsicles
1 1/4c Bai5 Malawi Mango
1 ripe avocado
1 fresh ripe mango
handful of spinach, kale, chard, or mixed greens of choice (used Earthbound Farms Power Greens, a mix of organic baby kale, baby spinach, and baby chard)
2 kiwi
Slice kiwi into thin slices or chunks. Remove skin from the mango. If wanting mango pieces in your popsicle slice thin and cut or slice into chunks. You will be using remaining mango, at least half a mango, in the popsicle base. Slice avocado in half and scoop avocado into a Vitamix, or high-speed blender, and add in mango, Bai, and greens. Blend until smooth. If using a Zoku Quick Pop Maker place your sliced kiwi and or mango into the molds and than pouring in the blended popsicle base. If using a standard mold you can mix in cut fruit chunks or you can layer them in adding part of the smoothie base, than fruit, and more smoothie base, as desired. Prepare popsicles and freeze per your popsicle molds instructions. Our Zoku Quick Pop Maker Popsicles take about 6-7 minutes, our Standard Zoku Popsicle Molds take about 6 hours but we usually put those in the freezer overnight. Remove popsicles and enjoy!
