Thank you for joining me for another Meatless Monday! Deborah and I hope you will link up with your favorite recipe below or be inspired by one of the many that are linked below. I’ve got a pretty sweet recipe for you today, Superfruit Superfood Salad! It’s a super sweet way to start the week!

Fruit! So sweet and fresh, often called natures candy. Something that we always have a lot of in our house and gets consumed a lot. Breakfast, lunch, dinner, snack, dessert fruit is always a great option. I’m not sure they have a favorite way to enjoy it or even could narrow it down to just 1 favorite fruit. They grab it for a snack, A even putting it in her purse one day when I told them to grab a snack quick before we left and she pulled it out and started eating it as she walked through the mall. It wasn’t a small apple either and when people looked at her she thought they were strange, she even had a napkin in case it dripped and to wrap the core in when she was done. There are days the girls will just have fruit for breakfast instead of fruit and yogurt, toast, or cereal (muesli and fruit is one of my favs!). Sometimes when they pack their own lunches it will be almost all fruit, a veggie, and a chia drink, water, or smoothie. Oh and if it’s A a nut butter packet. It’s one of their favorite after school, soccer, and gymnastics snacks. So after getting requests for fruit for dinner, my oldest talking about fruit salads that aren’t really fruit and why do they call them that when there isn’t a lot of fruit. Usually if we make a fruit salad it is just a bunch of fruits cut up that we have on hand thrown together. We do it all the time for brunches and get togethers, my mom always making a marshmallow dip for the holidays. I threw together a Superfruit Superfood Salad! Of course we mix them up with what we have on hand using pineapple, pears, apples, plums, berries, mango, grapes, pretty much any fruit that is in season and on hand when we make it. Than you add in chia seeds, nuts, dried superfoods like goji berries, coconut or anything else. The options are endless just pack in a variety of fruits, as many superfruits as possible like antioxidant packed berries, and superfoods that you can! This is just a favorite I made recently.

 

 

Superfruit SuperFood Salad WM2

 

Superfruit Superfood Salad
Makes 2 servings
1c strawberries, steamed and quartered
1/2c blueberries
1/2c blackberries
1/2c raspberries
1 mango, cubed
2-4 TBSP goji berries (Navitas Naturals)
2 TBSP finely shredded unsweetened coconut (Trader Joe’s Organic)
2 TBSP chia seeds (Navitas Naturals)
1 lime

In a bowl combine mango and goji berries and squeeze juice from lime over. Add in berries and carefully mix. Sprinkle in coconut and again carefully stir. Divide into 2 bowls and sprinkle with chia seeds. Enjoy!
