Sweet Potato Apple Bowl

 

So many of my favorite foods come together perfectly in this bowl! This Sweet Potato Apple Bowl can be thrown together as a breakfast bowl or a “salad”. When I make it as a breakfast bowl I pour a little almond milk over it, served hot or cold. For the “salad” version I eat it cold and add a little nut butter.

 

Sweet Potato Apple Bowl

Makes 1 serving

1/2 a large sweet potato, peeled, cooked, and cooled

1 small or 1/2 a large apple

1TBSP chia seeds

1TBSP ground flax seed

1TBSP craisins, raisins, or dates (used craisins this time)

1TBSP chopped pecans or walnuts, optional

almond or non dairy milk, used for breakfast versions (So Delicious Unsweetened Almond Milk Plus)

1-2TBSP almond or peanut butter, for “salad” version (used MaraNatha Almond Butter)

 

Cube your cooled sweet potato, even if I want this hot I will cube the cut sweet potato when cooled and I will heat it up after with the chopped apples. Core and chunk your apple, I cut my slices and then into chunks. In a bowl toss together sweet potato and apple, if you want it heated this is where you can heat it up. Add chia, flax, craisins, and nuts then toss together. Top with non dairy milk or nut butter. Enjoy!
