Flipping through Martha Stewart Living I came across Tartufo For Two. Tartufo is an Italian ice cream dessert that is usually made of two or more flavors of ice cream that contains frozen fruit or a fruit syrup in the center, and is covered in a chocolate shell. Of course I didn’t know this until after I looked it up. I went off what was written in the magazine which says it is an Italian frozen dessert made by packing 2 flavors of ice cream into a bowl, toppings them with a cookie crumb mixture, than turning it out and coating with a chocolate shell. It usually has a maraschino cherry hidden inside but hers had two. So reading that and thinking it was a great idea I went to make it except my husband isn’t a maraschino cherry fan but he likes marshmallows so I thought I would do that instead. We don’t usually go out for Valentine’s Day and instead stay in and make a nice dinner and I thought this would be perfect! Not that we sit next to each other eating a pint of ice cream on the couch watching a movie with a glass of wine but hey that is one of our favorite Friday night activities. Well switching up the ice cream for popcorn, and more often then not lately popcorn and wine but we love our ice cream.
Of course I asked him what his favorite flavor of ice cream was, knowing what it was but funny as he always loves all the toppings but if he is going basic it is chocolate and a specific brand, Blue Bunny. Can’t even remember the last time I bought that, heck I can’t remember the last time I saw Blue Bunny Ice Cream now that I think of it. I thought it would be fun to take a flavor he loves and a flavor I love and pair them into this dessert. So I went to the store to grab chocolate ice cream because I was out and they were out too. Really?! It’s negative sub zero temps I don’t feel like driving around looking for ice cream. So I went back home and the next day went to another store when we were out and they didn’t have it either, only the soy which I didn’t want. So I decided I would have fun and went to the freezer and pulled out two flavors we did have So Delicious Salted Caramel Cashew Cashew Milk Ice Cream and So Delicious Snickerdoodle Cashew Milk Ice Cream. Both delicious, the only thing is they are the same color so I don’t get the wow factor I would if I paired chocolate and vanilla or two different colored ice creams. Since I had just made a batch of Vegan Salted Caramel I also decided to coat the marshmallow in caramel. So I did that, added the cookie crumbles, and topped it with chocolate! It wasn’t very cute so I put a little marshmallow on top. Maybe that is where it gets it’s name, Tart-ufo, as it looks like a UFO? Really looks didn’t matter because ice cream, cookie crumbles, and a hidden marshmallow covered in chocolate is enough to get anyone to dig into this dessert!
Since there wasn’t a huge contrast in colors with the two ice creams I had thought about making another flavor for Valentine’s Day and updating the post but I decided to whip one up sooner! Yep instead of us grabbing pints of ice cream and watching a movie one night I whipped up another version! This time with So Delicious Cappuccino Cashew Milk Ice Cream and Dark Chocolate Truffle Cashew Milk Ice Cream! I had to go with another flavor than my Salted Caramel Cashew since they were out but this ended up being the perfect pair, especially when I filled the center with my homemade salted caramel sauce (recipe can be found in the linked recipe)! I than did an crushed espresso bean and chocolate cookie base and topped it with an espresso bean and a couple large salt flakes. It was so delicious!

Tartufo For Two (as shown with marshmallow center)
Makes 2 servings
1/2 pint So Delicious Dairy-Free Salted Caramel Cashew Cashew Milk Ice Cream
1/2 pint So Delicious Dairy-Free Snickerdoodle Cashew Milk Ice Cream
1 large Dandie’s Vegan Marshmallow
5 chocolate sandwich cookies, Oreos
2 TBSP homemade caramel sauce (recipe can be found in this post)
1/2c Navitas Naturals Cocoa Powder
1/4c pure maple syrup
1/4c coconut oil, melted
or
Salted Caramel Mocha Tartufo for Two (shown)
Makes 2 servings
1/2 pint So Delicious Dairy-Free Dark Chocolate Truffle Cashew Milk Ice Cream
1/2 pint So Delicious Dairy-Free Cappuccino Cashew Milk Ice Cream
3 chocolate sandwich cookies, Oreos
1-2 TBSP chopped espresso beans
2-3 TBSP homemade caramel sauce (LINK)
1/2c Navitas Naturals Cocoa Powder
1/4c pure maple syrup
1/4c coconut oil, melted

Create Your Own Tartufo For Two
Makes 2 servings
1 pint of ice cream, 2 flavors (so 1/2 pint of ice cream each, or 1 1/2-2c ice cream)
1 large marshmallow, or other treat to put in the middle
1/2c crushed cookies, candies, or nuts
1/2c cacao/cocoa powder
1/4c pure maple syrup, honey or agave can also be used
1/4c coconut oil, melted
Pull your ice cream pints out of the freezer and let them thaw for about 10 minutes so they are soft enough to spoon out and easily mold into your bowl. While you are waiting for the ice cream to soften line a shallow bowl (mine was about 4 1/2 ” diameter, and held about 1 1/4 cups) with plastic wrap leaving enough overhang to grab onto to pull it out. Crush your cookie pieces and set aside. If coating a marshmallow with caramel you will also want to do that and place it in the freezer for a couple minutes for the caramel to harden. Spoon your first flavor into half of the bowl (for my bowl I only needed 3/4 of a cup of ice cream not full half pint), place your marshmallow or filling in the middle, and fill the rest of the bowl with the other flavor of ice cream. Lightly press crushed cookie pieces on top of the ice cream, cover with plastic wrap, and place in the freezer for 2 hours or overnight. Depending on your freezer and ice cream used it may freeze in less time. Remove ice cream from the freezer. Place a hot towel on the bowl, and using the plastic wrap gently pull ice cream out of the bowl. Place cookie side down on a cooling rack over a plate and place in the freezer while mixing the chocolate. In a medium bowl whisk together maple syrup and melted coconut oil until combine. Whisk in cocoa powder until smooth. Remove ice cream from the freezer and quickly but carefully starting at the top middle and slowly going around pour chocolate over the ice cream. Place a new plate under the rack and place in the freeze for 5 minutes. The extra chocolate on the plate is great in a mocha (2TBSP of the chocolate sauce, 1c coconut milk, and 2 shots of espresso), if you don’t have hands in there helping you clean it up. Remove ice cream from the freezer, plate, grab two spoons, and enjoy!
If not enjoying right away let the chocolate set fully, about 10-15 minutes, place tartufo on a clean plate, and wrap with plastic wrap.
