My youngest daughter recently (well as in the last couple months) found a new love, butterscotch. Yes those she tried those butterscotch chips for the first time, and then she found out that they have butterscotch dipped ice cream cones at Dairy Queen. She has yet to have one but I think that will happen soon since she will probably go with grandma and grandpa the next time she sees them. I’ll have to keep you posted. Then it happened one day she got into the jar of Toffee Crunch Nuts N More Protein Peanut Butter!! If you haven’t tried it you have to! You may have seen Nuts ‘N More on Shark Tank, they are protein peanut butters that have this sticky indulging smooth caramel like texture. She has had it before, in Lindsay’s Gluten Free Dark Chocolate Reeses Protein Bites. They are amazing and between my daughter and I we polished the first batch off in no time! What can I say my baby girl A (who isn’t a baby anymore) she a serious love for peanut butter (nut butter in general) and peanut butter and chocolate! While my oldest daughter use to “sneak” chocolate chips when she was little I could totally see myself walking into the kitchen to A holding a big spoon of peanut butter rolled in chocolate chips! Now that we are into full juggle mode with summer and multiple soccer schedules to juggle (even more so this year with rec leagues for both and competitive for the oldest), gymnastics, running/races, and still trying to fit in general summer family fun where we can. This means a lot of meals/ snacks on the go and quick and simple meals. So bring on the smoothies, salads, granola bars, popsicle, and power ball recipes! Of course we will also be consuming ice cream, grilling, popcorn, and lots and lots of fresh fruits and veggies! So as I start to prep up food and get our power ball freezer stash going again I had to make Toffee Crunch Power Balls for A for gymnastic and soccer snacks. Verdict…. she loves them! See notes below to make with other nut butters. I even have a little extra fun swirling in some extra Nuts N More Toffee Protein Peanut Butter, but these can be a little messier to take on the go if too much is added. Either way these are sure to be a staple in our freezer this summer!
Toffee Crunch Power Balls
Makes about 22-24 balls
1/3c almond meal or cashew meal*
1/2c Nuts ‘N More Toffee Crunch Protein Peanut Butter**
1c vanilla protein powder (used Vega Viva Vanilla Protein Smoothie)
1/3c honey or maple syrup
*You can use oat flour or coconut flour you may just start with the amounts listed and add more nut butter/flour as needed.
**These can be made with almond butter or other nut butter, just use the same amount and add a little natural butterscotch or toffee flavor to taste adding into the wet ingredients so it is mixed in evenly. For nut butters I like Peanut Butter & Co White Chocolate Wonder and Justin’s Almond or Vanilla Almond Butter.
In a medium bowl mix together peanut butter and maple syrup/honey until smooth. In a small bowl mix almond/cashew meal and protein powder. Add the dry ingredients into the wet and mix. I mix this until it starts to come together and then I use my hands. The dough will be dry but you don’t want it too wet, just not too dry it crumbles when you try to roll it. Add a tablespoon or two of water if needed. If wanting swirls once the dough has come together you can drizzle in a little extra Toffee Crunch Peanut Butter, the dough will be stickier. Roll into balls, I usually make 22-24 balls, and place on a plate. Store in a airtight container in the refrigerator, or freezer for longer storage, pulling out as needed. Enjoy!

It is so good. I love peanut butter but this one is like a dessert and rich and not sure I could even polish off a jar if I wanted to.

The berry is the only one I am not a fan of, well and I can’t do the natural alone. Everyone is different though. I remember people raving about a shake and I just wasn’t a fan. You can use any vanilla protein you just may need to adjust a tweak a little at the end with a little more powder or a dash of water.
