As I mentioned in a previous blog post, we are into full juggle mode with summer and multiple soccer schedules to juggle (even more so this year with rec leagues for both and competitive for the oldest), gymnastics, running/races, and still trying to fit in general summer family fun where we can. This means a lot of meals/ snacks on the go and quick and simple meals. So bring on the smoothies, salads, granola bars, popsicle, and power ball recipes! Of course we will also be consuming ice cream, all the grilled goodies, popcorn, and lots and lots of fresh fruits and veggies! After I made A some Toffee Crunch Power Balls for gymnastic and soccer snacks I had to whip up some Toffee Mocha Chocolate Crunch Power Balls for me! Yes driving my girls around from activity to activity and cheering takes a long of energy I need to stay fueled! Haha! No I actually love these post workout or when I need a healthy snack on the go. Some days when we are going non stop and I am juggling the schedules, prepping food, doing laundry, cleaning, and don’t get a break I grab on of these out of the freezer or refrigerator for a little pick me up treat. Back in the day there were bon bons for busy moms now days there are power balls! 😉 It is no surprise if you are a regular reader that I love coffee and Caramel Macchiato have been one of my favorite guilty pleasures for years (I usually I try to get my fix in a healthier way but still enjoy them as a treat) which changed to a cross of a Caramel Macchiato and a Cinnamon Dolce Latte. Hmm, I think I see another version of these coming…. Ok I’m back sorry the wheels were turning there for a second. These Toffee Mocha Chocolate Crunch Power Balls use my favorite Vega Mocha protein, sweet Nuts N More Toffee Crunch Protein Peanut Butter, and optional chopped chocolate. Nuts N More isn’t vegan, see below for substitutions. For the chocolate I like to use a Vega Maca Chocolate Bar! The texture on these power balls is amazing and will be a staple in our freezer this summer! I just have to remember to hide them so my oldest doesn’t steal them!
Toffee Mocha Chocolate Crunch Power Balls
Makes about 22-24 balls
1/3c almond meal or cashew meal (or coconut flour as used in ones shown, see notes below)*
1/2c Nuts N More Toffee Crunch Protein Peanut Butter*
1c mocha protein powder (used Vega Mocha Sport Protein)
1/3c maple syrup or honey
1/2 Vega Maca Chocolate Bar finely chopped, or 1/4c finely chopped chocolate or cacao nibs, optional
*You can use oat flour or coconut flour you may just start with the amounts listed and add more nut butter/flour as needed. Coconut flour required a little more nut butter and honey/maple syrup, 1-2 tablespoons more of each. They taste just as good but have a little drier texture than those made with almond/cashew meal like shown in the Toffee Crunch Protein Power Balls.
**These can be made with almond butter or other nut butter, just use the same amount and add a little natural butterscotch or toffee flavor to taste adding into the wet ingredients so it is mixed in evenly. For nut butters I like Peanut Butter & Co White Chocolate Wonder and Justin’s Almond or Vanilla Almond Butter.
In a medium bowl mix together peanut butter and maple syrup/honey until smooth. In a small bowl mix almond/cashew meal and protein powder. Add the dry ingredients into the wet and mix. I mix this until it starts to come together and then I use my hands. The dough will be dry but you don’t want it too wet, just not too dry it crumbles when you try to roll it. Add a tablespoon or two of water if needed. Add in chopped chocolate if using. Roll into balls, I usually make 22-24 balls, and place on a plate. Store in a airtight container in the refrigerator, or freezer for longer storage, pulling out as needed. Enjoy!
