Our garden is producing lots of tomatoes and this is just the start as we have so many that are still green. I love mixing different colors of tomatoes for a bright vibrant salad and the orange cherry tomatoes and red grape tomatoes were just calling my name! This is a salad that works with any tomatoes that you have on hand. When using smaller tomatoes like cherry or grape tomatoes I slice them in half. When using larger bushel boy, or my favorite this summer lemon boys (they are bright yellow like the sun!) I will cut them in wedges or cut into chunks cutting wedges in half. Instead of making my Tomato Watermelon Salad that I have been enjoying a lot lately. I decided to go a different direction because the girls had eaten the watermelon I planned to use, and I can’t blame them, and made a simple salad with avocado, chives, and vegan coconut bacon. It was nice to switch things up and have something salty and savory. Ripe juicy tomatoes paired with creamy avocado, chive, and salty vegan bacon for crunch was perfect! Sorry if you are a regular reader you are going to hear me say it again, if you want you can just skip down to the recipe now…… Who says salads are boring? Next time you hear someone say they are sending to my blog because this salad is NOT boring!
Tomato Avocado Salad
Makes 1 serving, easily multiplied for more
2c small tomato halves, or 1-2 larger tomatoes cut into wedges or chunks
1/2 ripe avocado, cubed
2-3 fresh chives, chopped
1-2 TBSP vegan coconut bacon, or bacon of choice, optional
salt and pepper to taste (depending on bacon used if using it is probably salty enough)
Toss everything together and enjoy!
