Today is the first day of the So Delicious 21 Day Dairy Free Challenge! To celebrate I created a healthy and delicious Tropical Berry Kombucha Smoothie for So Delicious to kick things off. So Delicious has been doing this challenge for a few years now and it’s always fun. Whether you are new to a dairy-free lifestyle, have been living dairy-free for years, or want to cut out dairy and see how you feel there is something for everyone. It’s a 21 day challenge that starts today and goes through February 12th, or longer! There is a Facebook group with support and resources, challenges, and giveaways! I hope you’ll join me and many others.

If you are new to a dairy free lifestyle there are so many new products coming out, restaurants that are more flexible, it’s a lot easier than it use to be. A big game changer for me was finally making delicious dairy free pizza. With So Delicious dairy free yogurts, beverages, my favorite Culinary Coconut Milk, and delicious ice creams (my fav is the Salted Caramel Cluster Cashew Milk Ice Cream, another game changer for this ice cream lover). Not to mention eating smoothie bowls for breakfast and I have a delicious one coming later this week that’s inspired by a classic favorite treat, but don’t worry it’s so healthy there will be no guilt eating it for breakfast!

Now to start the challenge, day, and week we’re raising our glasses filled with Tropical Berry Kombucha Smoothie!

It’s no secret that we like our smoothies and our kombucha (probiotics). My girls and I drink our kombucha and sparkling probiotics daily and are making our own again but it isn’t nearly enough to keep up with our love for it. Sometimes we combine them but not too often but more so this year, especially when we come up with delicious combos we all love. This is one we’re really loving and I had to share but was waiting for the perfect time. This is a simple healthy and delicious smoothie that kids and adults both love. Made with ingredients that are in season and easy to find. Starting with base of So Delicious Coconut Milk, a fresh orange, frozen pineapple, and a hint of fresh ginger. Than swirled or layered with a raspberry chia probiotic/kombucha smoothie. Healthy fats, omega-3, vitamins, minerals, amino acids, antioxidants, fiber, and probiotics all packed into a delicious good for your gut smoothie we like for breakfast but also makes a refreshing snack. I’m not going to lie it’s a smoothie we play with and swirl around before and while we sip it.

If you’re new to kombucha this is a great time to pick up a bottle to try, you only need a cup to make this smoothie so you can drink the rest or make multiple smoothies. If you don’t like kombucha it won’t be wasted either as you don’t really taste in this smoothie but you’d still get the health benefits. We’ve used ginger, ginger lemon, raspberry lemon and a couple others in this. If kombucha isn’t something you like you sparkling probiotic drinks are another option. My girls love Kevita Sparkling Probiotics, we buy them at Target and Whole Foods.

Tropical Berry Kombucha Smoothie
Makes 1-2 servings (or double to make 2-3 servings with the same amount of raspberry, kombucha, and chia)
1c So Delicious Coconut Milk
1 orange, peeled
1c frozen pineapple chunks
1tsp grated fresh ginger
1c frozen raspberries
1c kombucha, or sparkling probiotics (we’ve tried it with GT’s Gingerade, Kevita Lemon Ginger Sparkling Probiotics, Kevita Raspberry Lemon Kombucha, and local Lakestate Orange Mango Kombucha)
1 TBSP chia seeds (Navtias Naturals)

 

In a Vitamix, or high-speed blender, blend together coconut milk, orange, pineapple, and ginger until smooth. Pour into glass(es). Add raspberries, kombucha, and chia seeds to your blender and blend until smooth. Pour on top of smoothie(s). Enjoy!
