Vegan Buffalo Chicken Neapolitan Pizza

There’s talk of some big game this weekend, I think a football game. I could be wrong since I’m not a fan of football. Kidding of course I don’t live under a rock but the only reason I know is because it’s posted all over and I do tend to watch the half time show, sometimes. While I’m not a fan of football I am a fan of “game day” eats. Nachos, guac, veggies, oh and buffalo cauliflower bites. I like the buffalo flavoring and years ago when I use to go out with friends for wings I would just sit there and dip celery in the buffalo sauce and the blue cheese sauce. Crazy I know but I’ve never been a fan of wings and come to think of it now even sure if I’ve ever tried one. I did use to eat boneless buffalo bites but it’s been at least 8 years.

Anyways since it’s “the year of pizza” I had to whip up a Vegan Buffalo Chicken Neapolitan Pizza! If you haven’t read about our Family Foodie Dates and this years theme being pizza. We even have cute custom shirts with fun pizza sayings like “Say Cheese”, “In Pizza We Crust”, and “Yeah I’m into fitness, fitness whole pizza in my mouth”! The hubby is too cool to have one, not that I can blame him sequins really aren’t his thing. LOL Not that I would get him a sequin one.

With the theme of this year being pizza I’m guessing our homemade pizza nights might cut down a bit, as they already have so far this year but still we will have them and I’m thinking of trying to keep the pizza recipes to one a month, unless of course readers want more or I get an amazing out of this world one that I just can’t help but share and can’t wait until the next month.

Vegan Buffalo Chicken Neapolitan Pizza

So to this amazing Vegan Buffalo Chicken Neapolitan Pizza! It’s packed with so much flavor and texture. Starting with my husband’s easy to make (you just need to prep the dough ahead) Neapolitan Pizza Crust, it’s so puffy and chewy. If you haven’t made it or a Neapolitan crust at home I think this is the year to do it! Top that with Beyond Meat Chickenless Chicken covered in buffalo sauce, shredded mozzarella cheese (Miyoko’s VeganMozz, my personal fav vegan mozzarella cheese), and than because I couldn’t help it chopped celery. As I was eating it I thought I probably should have tried to whip up a dairy free blue cheese dressing or ranch dressing to drizzle over top. I haven’t had the time to play with that idea in the kitchen yet and I was happy with the pizza as it was.

With this “big game” happening this Sunday I’m having a hard time deciding on if I should just whip up buffalo cauliflower, guac, and veggies or go with something more exciting like this pizza (or homemade pizza night) or another favorite… nachos! So many choices!

Vegan Buffalo Chicken Neapolitan Pizza

 

Vegan Buffalo Chicken Neapolitan Pizza
Makes a 12-14″ pizza*
1 pizza crust (1/4 Homemade Neapolitan Pizza Dough)
1- 9oz bag Beyond Chicken Grilled Strips
1/3c your favorite buffalo hot sauce
3-4oz shredded fresh mozzarella (Miyoko’s Fresh VeganMozz)
1/2 stalk celery, chopped

*I make a 12-14″ pizza with our homemade crust. If you want a thinner crust you can probably go to 16″ or this would still probably work with the same amount of toppings if you are using another 16″ crust.

Make Neapolitan Pizza Crust if using, you will have to make the dough 3 hours, 4 hours is best, ahead of time. It doesn’t take long to make you just have to let it rest and rise.

 

Heat grill or oven, with pizza stone placed inside, to 550F if using my husband’s crust recipe otherwise heat per your pizza crust directions. Toss or roll your pizza dough and place on a piece of parchment paper on a non rimmed baking sheet. Let chicken strips thaw just enough to chop them into bite size pieces. In a large skillet heat buffalo sauce and chicken until just warmed. Carefully spoon the mixture on your pizza crust leaving about a 1/2″ of crust around the edge. Sprinkle with shredded mozzarella. Place pizza, keeping it on the parchment as it will easily slide on and off your pizza stone, onto the pizza stone. Check at 6 minutes, the crust should start to be golden brown and cheese is melted. It can take up to 8-10 minutes depending on the temperature of your grill/oven. If using your own crust bake per your crusts instructions. Remove pizza, sliding a baking sheet under the parchment paper. Sprinkle with chopped celery. Enjoy!
