It’s Friday night and once again PIZZA night! Yes I know I’ve caught the pizza bug that family and friends around me have had for years. Now that I can really enjoy it with all the options out there and as I said falling in love with the Neapolitan crust recipe my husband makes it’s a guilty pleasure of mine. Weekend nights use to be nachos, tacos, anything Mexican which I think the girls were getting sick of. With me now loving pizza night we are all happy!

Now I bet you’re already thinking vegan, pulled pork? Yes an oxymoron like the place I got it… the Herbivorous Butcher Shop, yep an all vegan butcher shop. It is a jackfruit based “pulled pork” and you can also get other brands at Whole Foods that I have tried but the one I remember trying I wasn’t crazy about the flavoring used. So the reason I went with this is I was craving BBQ. I have said it before but I have a thing for BBQ as well but not being a meat eater I put BBQ sauce on the strangest things. One thing being coleslaw or any other veggies I can get my hands on at a picnic. Or dipping sweet potato fries in it! So I got a Bourbon Chipotle sauce I like and used that as a sauce. Than of course topped with the pulled pork, my fav Miyoko’s Fresh Vegan Mozz, and all the veggies peppers, onions, oh pineapple, and another fav coconut bacon! So much flavor in this pizza it’s enough to make even meat eating men smile! Haha.

My passion for pizza is going strong and not sure what I’ll put on my next one! Oh and I’m not the only one not held down by the pizza shops toppings list. The night I made this one photographed we had a friend over from Ireland and he put corn on his pizza. I can’t say I’ve ever had a pizza with corn on it before.

Vegan BBQ Pulled Pork Pizza
Makes 1- 10-12″ pizza 
1- 10-12″ pizza crust of choice, or our Neapolitan Pizza Crust shown(used my husband’s Neapolitan Pizza Recipe)
1/4c BBQ sauce
6-8 oz vegan pulled pork (Herbivorous Butcher, jackfruit based pulled pork)
1/2 red pepper, sliced
1/4c diced green pepper
2 TBSP diced onion, or a if you want slices about 1/2 a small onion
1/3c pineapple chunks
4oz fresh mozzarella cheese (Miyoko’s Fresh Vegan Mozz)
2-3 TBSP coconut bacon (Organic Matters Coconut Bacon)
few sprigs chopped fresh cilantro

 

Heat grill, with pizza stone placed inside, to 550F if using my husband’s crust recipe otherwise heat per your pizza crust directions. Spread bbq sauce on the pizza crust as you would a pizza sauce. Sprinkle pulled pork, peppers, onions, pineapple, and cheese on top of bbq. Lastly sprinkle with the coconut bacon. Place pizza, keeping it on the parchment as it will easily slide on and off your pizza stone, onto the pizza stone. Check at 5 minutes but depending on the heat you are able to maintain it may take up to 8 minutes, the crust should start to be golden brown and slightly blackened on the outer edges like a traditional Neapolitan pizza. If using your own crust bake per your crusts instructions. Remove pizza, sliding a baking sheet under the parchment paper. Top with fresh cilantro. Enjoy!
