It’s warming up outside, trust me I’m not complaining after a long winter. Perfect time to break out the slushies and popsicles! Watermelon slushies are a delicious sweet treat without adding any additional sugar or sweetener and are quick and easy to make. One of my favorites is this Watermelon Ginger Refresher! If you like ginger like me add 1 teaspoon of fresh grated ginger, if you want just a hint add a little less. You can also make it less of a slushie by adding in coconut water. Next time you, or your kids, pick the BIGGEST watermelon on the market and you realize after you cut it there is no room in the refrigerator, freeze it! If you are like us and could sit down and eat the whole thing and not worry about where to put it just pick up 2 and cut one up to freeze.
Watermelon Ginger Refresher
Makes 1-2 servings
3 c frozen watermelon cubes
1 large lime, juiced
1/2-1 tsp fresh grated ginger
10-12 ounces coconut water for a thinner consistency, optional (without it is a thick slush)
In a Vitamix, or high-speed blender, blend watermelon, lime juice, ginger, and optional coconut water if using, until smooth. Enjoy!
