We still can’t seem to get enough watermelon! I have been buying 2 to 4 of them a week for over a month now. After a workout, soccer game, or just a day of playing outside in the hot sun cold refreshing watermelon drinks have been great to rehydrate. I have also heard that watermelon is great to have pre workout not only for the natural sugars and for electrolytes but also to reduce muscle soreness. It is packed with vitamins and minerals and is actually a fruit and a vegetable as if you needed another reason to eat more watermelon. To make this Watermelon Mint Cooler all you need is watermelon and mint! The trick is to use half frozen watermelon and half chilled. If you happen to have just frozen than you can add coconut water or a liquid of choice adding just enough to blend. Another favorite way to enjoy this is as a thick creamy smoothie! It is so delicious but it really doesn’t photograph well as it isn’t the prettiest color and adding greens to this one to make it a pretty green smoothie just doesn’t taste the best. I love when food looks as good as it tastes but I still have some favs that taste amazing but aren’t pretty. You can even make the Watermelon Mint Cooler into a refreshing cocktail adding a little vodka or rum to sip at your next summer get together or just chilling on the deck. Sometimes it just calls my name after being at the soccer fields at one of the girls soccer tournaments all day. Cheers to summer!
Watermelon Mint Cooler (shown)
Makes 1-2 servings
2c fresh 3/4″ watermelon chunks
2c frozen 3/4″ watermelon chunks
2-3 sprigs of fresh mint
Watermelon Mint Smoothie
Makes 1-2 servings
4c 3/4″ chilled watermelon chunks, or half fresh, half frozen
1/2 ripe avocado
2-3 sprigs of fresh mint
1c ice, optional
In a Vitamix, or high-speed blender, blend together watermelon and mint until smooth. If making into a smoothie blend in avocado. Enjoy!
